Of course, with the name Autumn Rose, fall was destined to be my favorite season. 

The colors of turning foliage are beautiful, the air is crisp, and it’s such a stunning example of the power of Mother Nature.

But my favorite part of the fall – is the cooking. Apples, pumpkins, squash – I love all of it and making big dinners that fill the house with the rich smells of butter, garlic and cinnamon, make me want to grab my blanket next to the fire and enjoy a big mug of cider…even if it is 95 degrees in Texas. 

So we’re making the perfect fall dinner recipe featuring the best parts of autumn, without all the work and definitely with all the flavor! Our dinner menu includes roasted pork tenderloin with Apple-Ginger Chutney, Spaghetti Squash with Butter and Garlic and an Autumn Sangria sure to get you in the mood…for fall that is!

Roasted Pork Tenderloin with Apple-Ginger Chutney

Description

Fall in love with this easy fall recipe


Ingredients

Scale
  • 1 (2- 2 ½ lb) pork tenderloins
  • 1 tablespoon fresh rosemary leaves, minced
  • 1 tablespoon fresh thyme leaves, chopped
  • salt and pepper
  • 2 tablespoons olive oil
  • For the chutney
  • 2 slices bacon, sliced
  • 3 medium apples, peeled, cored and thinly sliced (prefer gala)
  • 1 medium yellow onion, chopped
  • 1 tablespoon brown sugar
  • 1 tablespoon honey or maple syrup
  • 1/4 cup apple cider vinegar
  • ½ teaspoon cinnamon
  • ½ teaspoon ginger
  • salt and pepper

Instructions

  1. Preheat oven to 400 degrees.
  2. Mix herbs and seasonings together to create a rub and cover the tenderloin.
  3. Heat oil in large skillet over medium heat and add pork to brown. Just about 5-7 minutes.
  4. Now transfer to a roasting pan and place in oven for 45 minutes or until 155 degrees.
  5. In reserved skillet, add bacon and cook to crisp. Now add onions and apples until sautéed.
  6. Add ginger and cinnamon. Increase heat and add apple cider, brown sugar and honey then bring to a simmer. Stir in apples and salt and pepper. Cook for five minutes covered. Remove lid and allow for liquid to evaporate and apples are soft.
  7. Serve over sliced pork.

Roasted Spaghetti Squash with Garlic and Butter

Ingredients

Scale
  • 1 spaghetti squash
  • ¼ cup of parmesan cheese
  • 2–3 tablespoon butter
  • 2 tablespoons garlic, minced
  • 1 –2 tablespoons herbs – parsley, basil, etc.
  • 1 teaspoon salt

Instructions

  1. Cook squash (see note)
  2. Once cooked, scrape out the seeds and scrape meat of squash until it’s clean.
  3. Next in a skillet, add butter and garlic until sautéed.
  4. Then add herbs, squash and toss well.
  5. Lastly, add cheese and allow to cook until soft (about 2-3 minutes.)
  6. Serve.

Notes

  • Spaghetti squash can be microwaved or made in the oven to cook the meat of the squash.
  • I prefer to put in the stove, but if you’re in a jiffy, stab it a few times to allow for steam, place in microwave-safe pan and cook for about 5 minutes or until easy to cut into with a knife. If cooking in the oven, cut lengthwise in dish, and add enough water to come 1/2-inch up the sides of the baking dish. Cover with aluminum foil. Bake for 45 minutes, until the squash is easily pierced with a paring knife.

Autumn Sangria

Description

The perfect way to toast to fall is with this sangria!


Ingredients

Scale
  • 1 bottle Red (I like Pinot Noir or a Meritage for this)
  • 1 1/2 cups apple cider
  • 1/2 cup sugar
  • 1 cup apple brandy
  • 2 apples, chopped
  • 1 pear, chopped
  • 1 cup ginger ale or sparking wine (optional)
  • 2–4 cinnamon sticks

Instructions

  1. Place chopped fruit in a pitcher.
  2. Add sugar.
  3. Next mid brandy with fruit mixture.
  4. Slowly pour in apple cider.
  5. Add cinnamon sticks.
  6. Allow to sit overnight if possible to mixture can blend.
  7. Before serving, add bubbles for a little twist.
  8. Serve with fruit, cinnamon sugar rim, and enjoy!

Notes

  • I love serving sangria for Thanksgiving and this recipe is just right for serving with fall dishes like pork tenderloin, turkey, or duck.

Description

Apple pie hasn’t ever been this easy!


Ingredients

Scale
  • 1 can crescent rolls
  • 1 apple, chopped
  • 1/4 cup brown sugar
  • 1 teaspoon apple pie spice
  • 3 tablespoons butter, melted + 1 tablespoon
  • 1/3 cup nuts,choppped (optional – I prefer walnuts.)

Instructions

  1. Preheat your oven to 375 degrees.
  2. Spray baking sheet with cooking spray.
  3. Mix butter, spice and apples together. Set aside.
  4. Arrange rolls into triangles on sheet.
  5. Sprinkle brown sugar and nuts evenly onto each triangle.
  6. Next add apple mixture at the wide end of the triangle.
  7. Roll up triangle into crescent.
  8. With remaining butter, brush rolls.
  9. Sprinkle pie spice on top.
  10. Bake for 10-12 minutes until brown.
  11. Serve. So good for breakfast or dessert with ice cream!

Notes

  • Great snack to make with the kids!

Description

Makes a great gift for the holidays!


Ingredients

Scale
  • 1 can Grands refrigerated biscuits (any variety)

Filling

  • 2 apples, diced (prefer honeycrisp for baking)
  • 1 teaspoon lemon juice
  • 1/3 cup brown sugar
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla
  • Apple Pie Spice (see recipe)

For icing

  • 1 cup powdered sugar
  • 1/3 cup half and half or whole milk
  • 1 teaspoon vanilla

Instructions

  1. Mix all the filling ingredients together into a saucepan over medium heat. Cook until apples are softened. Set aside to cool
  2. Heat oven to 350 degrees. Spray loaf pan with cooking spray.
  3. On a piece of wax paper, separate biscuits into 8 then into 16 thinner biscuits. Lay them on the wax paper and flatten them out a little.
  4. Spoon filling (no more than a tablespoon into each biscuit but leave one without filling.
  5. Now turn cooking pan on its end and begin layering biscuits to create a tower in the pan of biscuit, filling, biscuit, filling. However, place the last biscuit with no filling on the top. (The tower will not fill the whole pan.
  6. Now turn pan rightside and place biscuits equidistant in the center of the pan with no sides touching. (It won’t seem “right” but the biscuits should hold long enough while baking to expand to the ends.)
  7. Cover with foil and bake 30 minutes. Then remove foil and bake until brown (about 5-10 minutes.) Don’t let them brown too much (no one likes burnt biscuits!)
  8. Remove from oven and allow to cool.
  9. To make icing, whisk icing ingredients together until thickened.
  10. Drizzle on top of loaf!

Notes

  • To half biscuits in half longwise from eight biscuits to 16, keep biscuits cold as long as possible to make it easier to tear apart.

  1. Mix all seasonings and place in an airtight container like a skaker or jar.

Description

What’s the best part of apple pie? It’s the apple! So we make this treat quick and easy with apples as the real feature, but a little bit of crust for the crunch!


Ingredients

Scale
  • 5–6 big apples (these won’t come in a bag, you’ll need to hand pick these)
  • 1 teaspoon of MamaChallenge.com’s Apple Pie Spice
  • 1/4 cup sugar
  • 1 tablespoon brown sugar
  • 1 tablespoon butter, melted
  • Premade pie crust (either they kind you can roll out or the double plates you can pull out and roll)

Instructions

  1. Cut the top of the apple. Using a melon baller, remove the inside of each apple carefully to not tear into the skin (you’ll create your own rind.)
  2. From your apple pieces, remove the seeds and discard.
  3. Take remaining apple pieces and combine with sugars and apple pie spice.
  4. Now add the apple filling back to each apple evenly.
  5. Roll out pie crust and slice into 1/4 strips to create your own pie crust lattice.
  6. Cover the top of the apple with the lattice pattern with strips.
  7. Brush crust with a little butter.
  8. Places apples in small square pan with just water to cover the bottom of the pan (very small amount.)
  9. Cover with foil and bake for 20 minutes until brown.)
  10. Remove foil and bake for 10-15 minutes until brown.

Notes

  • The hardest part of this pie is taking the apple out of the apple skin without making a whole! Take your time and you’ll have a perfect treat you’ll be proud to serve!

  • 1 tablespoon peanut butter or nut butter of your choice
  • 1–2 teaspoons granola

  2. Lay apples on a plate and spread nut butter across it.

Four Fast Lowfat Chicken Recipes

I had no idea then what that would really mean until I became a mom.

That’s why no matter how much I try to meal plan healthy dishes for my family, there are some days “it ain’t happening.”

  • 1 tablespoon Buffalo Wing Sauce

  • 1 tablespoon Parmesan Cheese

Instructions

  1. On a tortilla, lay a few leaves of salad in the middle of the wrap.
  2. Next add chicken strips.
  3. Then add dressing.
  4. Finish with cheese.
  5. To enjoy, roll up tortilla and enjoy!

My Lone Star Love Story with Migas

My love story with migas is actually a real love story. 

Actually, the night I met my husband we spent hours learning about each other over a plate of enchiladas and margaritas.


So when only a few months after we had dated he moved to Mexico for a study abroad program, I was devastated. However, during my first trip to visit him, I was destined to make him a Mexican dish that he was enjoy so much he’d wonder why he ever left Texas and would want to come home.

Not necessarily a practical idea, but at 22 and in love, you’re willing to do anything. Besides, there’s a southern saying that says the best way to a man’s heart is through his stomach. And I was going to do whatever I could do to try to put that to the test.

So over a one-burner stove in a not-so-glamourous apartment in Monterrey, I found a skillet, a few things in the fridge including eggs, tortilla, and green chiles, and walked through the steps of my first skillet of migas.

…Whether it was the setting, the ingredients, or just the fact that anything with eggs are good, that plate of migas was buttery, spicy and just dang amazing.  And apparently the dish worked since only three months into his study abroad program, he came home to stay. 

I like to say it was the migas that brought him back to Texas. And even if it was a little more than that, that first attempt at migas has blossomed into our first of many family dishes. 

So with a few tweaks, I share my love story with you in hopes you’ll be able to love someone over a plate of migas one day.

  • 6 Lone Star eggs, beaten
  • 1 onion, chopped
  • 5 corn tortillas, chopped or torn into pieces
  • 1 can green chiles, chopped
  • 3 tablespoons butter
  • cheese, cojita or Mexican shredded cheese
  • pico de gallo , cilantro, etc. for garnish

Instructions

  1. In a medium-hot skillet, melt butter.
  2. Add onion and saute until soft.
  3. Next add tortillas and brown slightly.
  4. Stir in green chiles and cook 2-4 minutes.
  5. Add eggs and cook 4 minutes until cooked, but do not allow to dry or overstir.
  6. Garnish with cheese, pico, and salsa.

Dinner time blues? Get back to school with Not Your Mama’s Slow Cooker Recipes.

Sure, meal planning makes getting on the table much easier, but I admit, it’s difficult to schedule the opportunity to lay out what your family is going to eat when, go to the grocery store to get exactly what you need and then most of all, put it all together for that perfect dinner that everyone loves…

Nobody got time for that…and face it, that’s not the times that most of us live in. So I’m sharing some of the best recipes to make your school nights easier – all made in the slow cooker! 

However, what we do have our a few minutes here and there to make our world rock a little better, especially during back to school time. So we’ve got a few tips for meal planning and recipes with the slow cooker that you may have never thought about. And takin’ a look at these slow cookers, it’s worth reconsidering if you think that these babies are only for roast and chili night.

Slow Cooker Chicken Fajitas

Ingredients

Scale
  • 2 lbs boneless skinless chicken breast halves (or chicken thighs, approximately 6-8)
  • 1 (14.5 oz) can petite diced tomatoes with green chilies
  • 1 red, orange and green bell pepper, julienned
  • 1 large yellow onion, halved and sliced
  • 4 cloves garlic, minced
  • 2 1/2 tsp chili powder
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 3/4 tsp ground coriander
  • 1 tsp salt
  • 3/4 tsp pepper

Instructions

  1. In a bowl whisk together chili powder, cumin, paprika, coriander, salt and pepper. Evenly sprinkle seasoning over both sides of the chicken breasts.
  2. Now pour the tomatoes into the bottom of a slow cooker and spread into an even layer. Top with peppers and onions. Then add garlic and lastly, the seasoned chicken.
  3. Cover and cook on HIGH heat 3 – 4 hours or low heat 6 – 8 hours, until chicken has cooked through and peppers are tender. (Depending on your slow cooker, you can do less heat for sliced fajitas or more for shredded.)
  4. Remove chicken and cut into strips or shred. Gently toss a little of the broth onto fajitas for more flavor. Now serve warm in warmed tortillas with sour cream, guacamole, cheese and salsa.

  • Back to school is easy with these standy that takes no time to prep or cook!

Slow Cooker Lasagna

Ingredients

Scale
  • 1 lb lean ground beef (or turkey or chicken)
  • 1 onion, chopped
  • 2 garlic cloves, smashed
  • 1 jar spaghetti sauce
  • 1 1/2 teaspoons salt
  • 1 teaspoon dried oregano
  • 6 ounces cottage cheese (or ricotta cheese)
  • 6–7 ounces Greek yogurt
  • 1/2 cup grated Parmesan cheese
  • 12 ounces lasagna noodles, uncooked
  • 16 ounces shredded mozzarella cheese

Instructions

  1. Brown ground beef, onion and garlic in pan.
  2. Add sauce, salt and oregano.
  3. Spoon a layer of meat sauce onto the bottom of the slow cooker.
  4. Add a double layer of uncooked lasagna noodles and top with cheeses. (You can break noodles to cover.)
  5. Repeat with sauce, noodles and cheeses until all are used up.
  6. Cover and cook on low for 4 to 5 hours.

Slow Cooker Lemon Rosemary Chicken

Ingredients

Scale
  • 1 whole chicken
  • 4 lemons
  • 2–3 heads garlic
  • Fresh rosemary and other favorite herbs
  • Poultry seasoning

Instructions

  1. Cut garlic and lemons in half. Save one half lemon, a few slices of lemon (cut wide) and garlic head and set aside.
  2. Lay in bottom of slow cooker so they lay flat.
  3. Clean chicken, rinse and pat dry.
  4. Season chicken with poultry mix, all over (both inside and out) as well as salt and pepper.
  5. Lay chicken onto garlic and lemon and stuff garlic into cavity of chicken.
  6. Cover chicken with lemon slices and rosemary.
  7. Cook chicken for around four hours on high (or until 165 degrees.)
  8. Turn off slow cooker, let chicken rest for 15 minutes and then remove from slow cooker to serve.
  9. Use reserve sauce to be served over chicken.

Slow Cooker Breakfast Egg Casserole

Ingredients

Scale
  • 20 ounces shredded hashbrowns (you can use frozen or fresh)
  • 4 ounces chopped ham, 8-10 slices of bacon, or 1/2 roll of crumbled sausage
  • 8 ounces shredded cheese
  • 12 eggs, beaten
  • 1/2 onion, chopped finely
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • Cooking oil or cooking spray to coat pan

Instructions

  1. Whisk eggs, milk, and seasonings in a bowl. Set aside.
  2. Grease slow cooker with cooking spray.
  3. Layer half of hashbrowns with half cheese, half meat and 1/4 onions.
  4. Then repeat hashbrowns, meat, cheese and onion.
  5. Pour eggs over the top of the layers.
  6. Cook for 2-3 hours on high or 4-5 hours on low.
  7. Sprinkle more cheese, meat and onions for garnish and serve.

While many of the animals sleep, DinoLumia and DinoVision: a Jurassic adventure comes out to play, along with tons of holiday light photo opps and winter fun experiences. Enjoy catching up through self-guided, self-paced walk-through and spend time together while taking photos, which is ideal if you don’t like the holiday overload! And don’t sleep on Santa here, as he has a certain twinkle in his eye the kids always seem to like to catch up with (mom was even able to get a shot.)

Growing up @cocacola made the holidays magic, so when Coca Cola Classic rolled down the road, we had to go peek! Partnering with @enchantchristmas, the experience is part lights, part photo opps and for my kids mostly FOOD and overall a lot of fun - all washed down with (of course, a Coca Cola!) 

What was also great was a little walk through memory lane with Coke Christmas moments throughout the years - cue the polar bears and 18 wheeler!

Christmas wouldn’t be Christmas without @prairielights- with a packed car with blankets, Santa hats, hot cocoa and coffee, and blasting holiday music while we sing them even louder.  

A stunning two-mile drive through light park complete with a midway stop - The Holiday Village with carnival rides, amazing bites (corndogs, funnel cakes and more, oh my!) And this year we were surprised with a new light tunnel, reimagined walk-through forest and new displays, great photo opps, gifts, visit with Santa, a lighted strollable forest.  It’s perfectly timed for food, fun and a little time on foot! 

PRO TIP: Go early, get tickets in advance and spring for the fast pass on the weekends and prime holiday times. And enjoy it and don’t try to rush it - enjoy it! That includes entry and the experience (so bathroom before you go, but thankfully there’s one at The Holiday Village and you get the corn dog.)

Named after Bangkok’s legendary road of entertainment of all kinds (Sukhumvit Soi 11), it seems fitting this newly imagined destination would find its home in Arlington’s Entertainment District. Anchoring the NEW @loewsarlington, @soycowboytx (also from @bbbutchers / @berghospitality) recently swung open the curtain this summer with an opening that made heads turn at every corner of this 12,000 sq. ft. of sexy space - with 3 unique bars, patio, viewable kitchen and dining room. 

To call it a “Pan Asian restaurant” doesn’t do it justice with its rich menu of fresh sushi, dim sum, caviar, truffle, lobster, waygu (all things you don’t find in the home of the margarita machine and ballpark nachos.) And if you’re looking for entertainment, just take a peek into the expansive kitchen and watch your rolls or omakase be made. The cocktail menu is just as extravagant with everything from mezcal to Japanese whisky, you’re eyes will be just as happy as your lips upon your first sip. 

While we experienced live music, fashion show and more as part of the opening, the cool smoke installation and the people-watching is definitely just part of the menu at Soy Cowboy you’ll have to explore.
