Description

This recipe was found in the Better Homes and Gardens cookbook but unfortunately, I haven’t been able to find it online so here it is as printed.

Ingredients

Scale
  • 1 cup cake flour, sifted + 2 tablespoons cake flour, sifted
  • 1/2 cup sugar + 1 cup sugar
  • 1 1/3 cup (11) egg whites
  • 1 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 2 tablespoons orange juice
  • 1 teaspoon grated orange peel
  • 4 well-beaten egg yolks
  • 1/2 teaspoon vanilla

Instructions

  1. Sift 1 cup flour with 1/2 cup sugar 3 times.
  2. Beat egg whites, cream of tartar, and salt until egg whites are stiff enough to hold up in soft peaks but are still moist and glossy.
  3. Add remaining 1 cup of sugar to egg whites, 2 tablespoons at a time, beating after each addition to blend. Sift about 1/4 of flour over egg-white mixture and fold in lightly.
  4. Fold in remaining flor-sugar mixture by fourths.
  5. Divide batter into 2 parts.
  6. Add orange juice and peel to egg yolks and beat with rotary beater until very thick.
  7. Fold the egg-yolk mixture and 2 tablespoons flour into 1/2 the batter.
  8. Fold vanilla into other 1/2 of batter.
  9. Spoon batters alternately into ungreased 10-inch tube pan; bake in moderate oven (375 degrees) about 30 minutes.
  10. Invert pan to cool.

Go Thai and Try: Easy Thai-Style Halibut Recipe

March 26, 2015 By Autumn Rose Reo 18 Comments

#MarketStreetDFW

When I was pregnant my only cravings were for strawberry cupcakes and anything Thai. I couldn’t get enough of anything Thai especially since its cuisine powers all those sweet, sour, salty and spicy taste buds. However, just because the flavor profile of Thai cuisine is complex not all the recipes have to be especially when using seafood.

Thai-Style-Halibut-MamaChallenge-Market-Street

With a few key ingredients like sweet chili sauce, cilantro and corriander,, you too can be cooking up your own Eastern-influenced  Thai-Style Halibut that will impress your family, friends and most of all, you!

Thai-Style-Halibut-Ingredients - MamaChallenge-Market-Street

The key to this dish and any meal you make with seafood is is selecting a great piece of fish. Halibut is a very versatile white fish you can use in many dishes and starting yesterday Market Street DFW received its first shipment of halibut. If you aren’t the type to cook with seafood because it seems too complicated, you just need these tips from Market Street to make you an aficionado.

Market-Street-Fish-Market-MamaChallenge Market Street has an incredible fish selection and if you still need a little help picking the right fish, how to cook it or even to get your fish steamed onsite, all you have to do is ask. While this dish could use almost any fish cut as a fillet or a steak, halibut cooks easily on the grill, stays together, pairs well with the chili sauce and the diversity of the other flavors with the flaky meat of the fish.

Fish Tip: Trying to figure out how much fish to purchase? Approximately one pound per person should be perfect.

Fresh-Seafood-Market-Street

Fish Tip: Wondering if the fish is cooked? Remember, fish continues to cook after you take it off the heat, so make sure NOT to overcook it.

Thai-Style Halibut

Ingredients

Scale
  • 2–4 halibut steaks or fillets
  • 3/4 cup Thai Chili Sauce (easily found in the Asian ingredient aisle)
  • 3 Tbsp. fish sauce
  • 6 Tbsp. soy sauce
  • 1/3 cup chopped corriander
  • 1/4 tsp. black pepper
  • 5 cloves garlic (Tbsp. pureed garlic)
  • 2 Tbsp. lime juice, freshly squeezed
  • 1 Tbsp. brown sugar
  • 2 Tbsp. cilantro, chopped

Instructions

  1. Combine all ingredients but the fish in a bowl, stirring until completely mixed.
  2. Rinse the fish, pat fry and place in a baking dish. Pour half the marinade over the fish and turn fish until thoroughly covered in the marinade. Marinade for 1-24 hours. (Reserve the rest of marinade for sauce.)
  3. Brush grill with oil (I used an indoor one over the stove, but outdoors is always best), then cook fish each side for 3-4 minutes. Do not overcook.
  4. To serve, serve fish right off the grill over Jasmine rice or vegetables. Cover fish with warm sauce and then garnish with cilantro.
  5. Enjoy!

Your New Favorite Brunch Recipes

March 20, 2015 By Autumn Rose Reo 35 Comments

Easter is always a great excuse to enjoy a big brunch, but who wants to eat the same ole thing? Here are your new favorite brunch recipes – perfect for Easter!

I love Easter for many reason, but one big one is BRUNCH! While there’s never anything wrong with scrambled eggs, there’s something awesome when you take it to the next level…as long, of course, that it doesn’t take 3 hours to make it and with as little clean up as possible.

Easter-Brunch

Inspired by some of the timeless favorite breakfast dishes, here are some of the best and easiest brunch recipes you need to make right now.

  • Up the ante on the Quiche Lorraine by replacing it with hashbrowns. Now it’s not only low-carb, but a quiche that any man can’t fight.
  • Take all your favorite breakfast staples like eggs, meat, cheese and croissants and wrap them up in a loop for this Easter Wreath. (The kids will love helping you with this one and it looks real impressive!)
  • Blueberry Cream Danish? Your mouth is already watering, right? But here’s a shortcut you’ll have them in your mouth, start to finish in less than 20 minutes. REALLY.
  • Breakfast. Taco. Enchiladas. Two of my favorite recipes come together for one delicious casserole that you can make, freeze, cook and serve. Just look at the presentation. And that’s just the outside of the dish!
  • While technically this is a dessert, the kids won’t let you wait to make this Easter Egg Fruit Pizza made with cookie dough pizza and fruit to make a beautiful display!

With just a little bit of time, you’ll have some new favorite dishes that you’re family will be raving about for many Easters to come. And you might just have to make some of these a couple of times in between, too. Here’s the lowdown on how to make these as featured on Fox Good Day!

Say I Love You with Red Velvet Oreo Truffles

February 12, 2015 By Autumn Rose Reo 9 Comments

The only better than Oreos? Red Velvet Oreos. Show your sweet side with these Red Velvet Oreo Truffles. EASY!

#MarketStreetDFW

Last weekend I shared a few quick ideas for Valentine’s Day you can do with the Fox Good Day. There were several cute ideas, but the one that stood out and has led to several text messages and Facebook emails is this recipe for Red Velvet Oreo Truffles.

In just three steps, I created these little monsters that I’m sure are the reason I only lost two pounds this week. Nevertheless, they were worth every bite I managed to get into my mouth.  As always I had posted this ridiculously cheap recipe to the blog, but the texts just kept coming.

Red-Velvet-Oreo-Truffles

” Where did you your Oreos?” came in streams for about four days as people were in a mad dash to find these limited edition little red devils.

Market Street! Market Street! Market Street! has had them in store since Feb. 4, but will only have them in for a short amount of time.

With cream cheese and the rich taste of red velvet sandwiched in two chocolate wafers, I knew exactly why people were looking for these like buried treasure. In a way, they kinda are…

Red-Velvet-Oreo-Truffles-Feature-MamaChallenge

While already perfect as an Oreo, once you add cream cheese and cover it in chocolate, it is almost overwhelming. So my suggestion is buy two packages…one to eat while you make the truffles with the other bag. Then eat five truffles, box them up and give them to someone else you never see or talk to. If you don’t heed my advice, you’ll eat them all right then and there. And there’s no need to gain a few pounds in one sitting of Red Velvet Oreos.

This recipe is PERFECT for a last-minute Valentine’s Day gift from the kids or something festive to do on Valentine’s Day. So make sure you snag those Red Velvet Oreos at Market Street and while you’re there, you can also snag what you need for a Heart Day dinner with prime rib, chocolate covered strawberries as well as a bottle wine to enjoy after the kids go to bed!

Valentine’s Day Crafts for the Kids

February 7, 2015 By Autumn Rose Reo 13 Comments

Valentine’s Day is supposed to be about love, not money or spending countless hours finding the perfect “thing.” Instead spend time together making these Valentine’s Day Crafts for the Kids something that you’ll enjoy creating as much as you will enjoying eating them!

Valentines-Day-MamaChallenge

I featured these make-and-dos on Fox Good Day Saturday.

Heart-Shaped Cake

Using two cake mixes and a cookie cutter, make a cake or bread that gets to the “heart” of the matter with a secret heart! What a great way to celebrate the holiday or to give as a gift.

Valentines-Day-Treats

Valentine’s Day Lunch Box

Making a healthy lunch together makes it fun to prepare for the next day’s meal OR you can make it a surprise when they open their lunch box. Best of all it only takes a few minutes to pack this V-day lunch box. Using strawberries, cheese sticks and toothpicks, we’ve created these Cupid’s heart and arrows.

Valentines-Day-Lunches-MamaChallenge

An added bonus: Healthy Valentine’s Day pouches that double as a healthy Valentines for your kids!

Go-Go-squeeZ-Valentines

Red Velvet Oreo Cake Balls

Red Velvet anything is a win, but when paired with an Oreo cookie, it’s downright heavenly. I may have lost some pounds with Jenny Craig, but these cookies I found at Market Street better find a new home because they aren’t going to last more than a day at the rate they are going right now. With only three ingredients and almost no cooking, your kids will love making these Oreo Cookie Balls with their hands. The most important thing to remember: Buy at least two bags of Red Velvet Oreos – one to make the cake balls and another bag to eat. (Just saying…)

Love-themed Art

I love any time you can take a memory or personalized moment like using your kid’s hand and foot prints. We’ve used them for all kinds of adorable crafts, but this time we’ve made artwork that you might actually put on your wall all year long using just canvas, paint and a little patience!

Coffee-Filter Flowers

A beautiful bouquet of flowers are normally a #1 choice at Valentine’s Day, but let’s be honest, they die after only a week. Using some left-over coffee filters (remember those things you have in the back of the cabinet after you got your Keurig) and some tape, you can make your own custom-made flowers and they last forever! Add a little food coloring and you can even change colors!

Coffee-Filters-Flowers

For more Valentine’s Day make and do including BACON ROSES, check out these treats including a free printable!

Or if you’re really out of time, but want to show you love them, you can always pick up a heart-shaped Papa Murphy’s HeartBaker Pizza (now until Feb. 14), stick it in the oven and claim it as your own.

The pizza is made from scratch with fresh dough in the shape of a heart and is topped with traditional red sauce, generous portions of 100 percent whole milk mozzarella cheese and premium pepperoni slices. It’s perfect for busy moms and those who want to celebrate the occasion without a lot of work, but with that ‘extra something’ that’s quick, easy and served fresh to your family. Priced at $7-$8 depending on your Papa Murphy’s location, it’s a steal. Many locations are also offering a ‘Sweetheart Deal’ for $11 which includes the HeartBaker and a S’Mores dessert pizza.

Papa-Muphy's-Heart-Pizza
Don’t worry, we won’t tell anyone.

Whatever you do, just remember to love it! After all, it’s Valentine’s Day!

Share Your Love with Easy Video App OneDay

February 4, 2015 By Autumn Rose Reo 18 Comments

SponsoredPostDisclaimer

Not living close to any family, I work  to keep everyone connected by capturing my kids’ moments – big and small – as a video on my phone.

All of our big firsts: the first day of school, the first loose tooth, and the first pirouette are few and far between. But it’s the times in between, the regular Thursdays or Sunday afternoons that I struggle with something to share. I mean snack time at our house isn’t exactly movie premiere content, unless you count that one time with the dog and a really slippery mess and I wasn’t exactly in the mindset to record a video for that one. And I definitely don’t have the time or the SKILL to create a video worth sending, but that doesn’t mean my family wants to wait until I’m inspired either.

image

Not exactly a scene worth turning into a video with OneDay.

Thanks to a new easy video app, I have a beautiful way to package a sweet holiday message or even just a “Hi Grandma” surprise without any thinking or editing required. The OneDay app is an Instant Movie Maker that helps parents create videos of their children like a pro in seconds with fun, unique and holiday themes with curated, thought provoking, fun story sets.

In just a few simple steps, I had a beautiful Valentine’s Day video that not only did the kids and I enjoyed making together, but made Gigi (grandma) feel like she was with us, even though she was hundreds of miles away.

It only took three easy steps:

  1. You open the app and pick a question from a wide selection of fun story sets like Valentine’s Day,  Merry Christmas and many more.
  2. Next you record your children’s answers with a tap of your record button (don’t worry, it’s created to start and stop with ease (and bathroom breaks.)
  3. Then the app automatically stitches the recorded videos together by adding music to make quality, priceless movies to share on Facebook, Twitter, texting and YouTube with family and friends.

OneDay-Logo
Best of all, this app is FREE and available on Google Play and iTunes and totally worth some space on your smartphone or tablet.

Do you have just five minutes to create a beautiful video to capture a special moment for you or your loved ones?

Make their day with OneDay.

Game Day: Score Big with Fish Tacos with Mango Salsa

January 21, 2015 By Autumn Rose Reo 23 Comments

Wanna score big at your Super Bowl Sunday party? Besides having the game on, make sure you have a good menu especially with these Fish Tacos with Mango Salsa!

Pollinate-Disclaimer-Del-Monte

Even if your favorite team isn’t playing or if guests aren’t really into football, you can still make a touchdown when your spread includes a little fun and a lot of flavor. However, that doesn’t mean you have to spend a lot of time in the kitchen. With just a few ingredients including Del Monte’s new Diced Mangos from Walmart, you will make your party a real fiesta!

del-monte-mangos-game-party-pmedia-ad

Tacos are always a crowd pleaser and when making food for a group of people creating options to customize it make it easier on you in the kitchen and more fun for your guests. This doesn’t mean just putting out tortillas, meat and cheese. You can still show your unique touch by preparing a couple of options with a little flair, like this two-minute mango salsa and an avocado sour cream with fish tacos, that take a normal dish from ordinary to extraordinary.

mango-fish-tacos-pmedia-ad

For our game day fish taco bar, we’ve fried up (or you can bake) a pre-made crusted tilapia, a three ingredient slaw (for extra crunch), our  two-minute mango salsa, avocado sour cream, a few cheese options served with corn tortillas (perfect for your gluten free guests, too). The key to a good fish taco is the crunch so using the crusted fish,  adding corn off the cob in the mango salsa and the cabbage in the slaw make each bite perfect and will keep your guests coming back for more.

taco-bar-pmedia-ad

Again, the best part for you? It took less than 30 minutes to create the entire taco bar! And using the left-over mango salsa, serve them with tortilla chips or even better, these tortilla cups for maximum presentation and convenience to keep the game going with no timeouts – for the game or you!

Don’t forget the ninos!

Share the fiesta fun with the kids while the grownups watch the game with the “Book of Life.” Available January 27 at Walmart, my kids are excited to bring this one home after seeing it in the theatre. Enjoy the Latin-themed legend of Monolo and his “epic quest through magical, mythical and wondrous worlds in order to rescue his one true love and defend his village.” Since my children are enrolled in Spanish immersion schooling, this movie was a great way to fuse the cultural aspect of Latin culture including Dia de los Muertos. However, even without the basic knowledge, you and the kids can still enjoy the story, its humor, and its teachings, as well as the vivid animation.

Ring in the New Year with Prime Rib {Recipe}

December 27, 2014 By Autumn Rose Reo 10 Comments

#MarketStreetDFW
There’s nothing like celebrating the holidays with delicious, special occasion meals. One of my family favorites is Prime Rib. Tender beef with a seasoned crust, paired with creamy spicy horseradish dipped into the rich flavor of au jus. Unfortunately, I have always had to rely on some restaurant OR someone else to make it – until now.

Prime-Rib

With help from my nearby Market Street DFW, I can pick up certified Angus Genuine Texas Beef Prime Rib AND know how to prepare it with cooking tips straight from Chef Chris. The beef from Genuine Texas Beef is made by Texans for only Texans and is available at Market Street.

Using only five ingredients and this video, my family can enjoy a meal I normally I can only get at my favorite four-star restaurant at my own family dinner table.

And a juicy prime rib dinner wouldn’t be complete without a hot bowl of au jus sauce to dip it into. Even easier the Prime Rib, with just a few ingredients and just a little bit of time, you’ll have a Prime Rib that your friends and family will ask you to make again and again.

Don’t Forget Fido: Holiday Picks for Your Pooch

December 24, 2014 By Autumn Rose Reo Leave a Comment

I’m not sure how I missed the popup of several local hot spots designed for the pupperdogs and kitty cats in DFW over the last few months. However, when I finally entered the doors of this hot spot known as Hollywood Feed in search of Hollywood Feed in search of Birddie’s stocking stuffers, I understood why you might name your pet store after the destination for the stars. If your four-legged friend doesn’t feel like a celeb once they leave this place, I don’t know what will.

Hollywood-Feed

With eight locations in the DFW, Hollywood Feed is a boutique/groomer/grocery store that’s gone to the dogs (and the cats.) With beautiful plush beds (available in S – XL), matching leashes and collars, photo frames, food and treats of every kind and all the stuff in between. Don’t miss the self-serve station for you to wash your pooch without making a mess at home (which is only $4.95 on Mondays) as well as a service just in case you don’t have time for that little bit of bonding.

Normally, my lab scores snacks and toys at Christmas, but I couldn’t help but match her collar and leash to her new ultra-soft donut bed!  And her stocking still got filled with a delicious dog cookie – perfect for holiday giving.

[Tweet “More than 63% U.S. households have 1 pet, so don’t forget them at the holidays! @HumaneSociety #Holidays”]

If you don’t feel like your pupper dog needs a new bed or closet of matching outfits, at least consider their health for 2015.  I participated in the Purina ONE 28-day Challenge and have seen the difference the right dog food can make for your dog. But I’m not the only one. Purina actually went to Asheville, North Carolina, one of the dog-friendliest towns in the U.S. to see how what changes happened in 28 days.

Just like these families, our Birddie dog not only was eating a better class of food, but it showed in her shiny coat, healthier teeth and gums and overall better health.

Purina-One-Birddie

Do you want to see the difference in your dog? Take the 28-day Challenge by Purina ONE:

1. Register for the 28-Day Challenge
2. Choose which Purina ONE dry dog food is right for your dog
3. Create a profile for your dog and follow our guidelines for switching to Purina ONE and get $3 off on her bag of Purina ONE.
4. Track and share the changes you see in your dog.

Do your pets get holiday gifts?

🚨 ACT NOW: Keep Public $$$ in Public Schools! 🚨

Click Here (takes less than one minute):
https://www.txpta.org/take-action

Tomorrow, March 11, the Texas House Committee on Public Education will hear HB 3. Let’s make it clear: Public money demands public accountability!

Texans have rejected vouchers since 1957—yet lawmakers are once again pushing them through with SB 2 and HB 3.

💰 Vouchers drain public school resources.
📉 They don’t improve student achievement.
❌ They aren’t about "parent choice"—private schools choose their students.
🏫 Texas parents already have school choice.

Governor Abbott is making vouchers a priority, but Texans are pushing back. Lawmakers are feeling the heat from voters who refuse to let public schools be undermined.

📲 Take 1 minute to make your voice heard NOW!

📷Jackson and Taylor are 2 of the 5.5 million reasons why Texas must keep public dollars in public schools. I was a product of public schools and had an amazing experience in a rural community with some of the best teachers. Change needs to happen, but taking away resources like these from schools is not especially when they ste already underfunded and our teachers’ morale is at an all time low. Communities work better together not when you separate them further apart.

WHERE TO CHRISTMAS IN DFW WITH TEENS // Classic Ch WHERE TO CHRISTMAS IN DFW WITH TEENS // Classic Christmas

🌲 Coca Cola Classic Christmas - Choctaw Stadium in Arlington
🗓️ Now through Dec. 29

Growing up @cocacola made the holidays magic, so when Coca Cola Classic rolled down the road, we had to go peek! Partnering with @enchantchristmas, the experience is part lights, part photo opps and for my kids mostly FOOD and overall a lot of fun - all washed down with (of course, a Coca Cola!)

What was also great was a little walk through memory lane with Coke Christmas moments throughout the years - cue the polar bears and 18 wheeler!

Experience:
🎅Market Square (definitely hit up the t-shirts - reading each one is half the fun)
🎅 Snow Tubing (always our favorite)Ice Skating (truth: we don’t skate, but it’s perfect people watching)
🎅 Interactive Light up Dance Floor
🎅 @cinemark Theatre with holiday movies
🎅 Coca-Cola Lounge - 21+ Cocktail experience (looked great to go with the girls)
🎅 Santa Landing

And of course, the Eatery! Eyes (and mouths) got big here with featured food from State Fair of Tex winners like The Drowning Tacos (SO GOOD we then ordered the Birria Tacos, too all cooked onsite and with all the sauce!)

It’s the real thing!

WHERE TO CHRISTMAS IN DFW WITH TEENS // Prairie Li WHERE TO CHRISTMAS IN DFW WITH TEENS // Prairie Lights

🎄 Prairie Lights, Lynn Creek Park in Grand Prairie
🗓️ Now through Dec. 31 (NYE) at 6 pm

Christmas wouldn’t be Christmas without @prairielights- with a packed car with blankets, Santa hats, hot cocoa and coffee, and blasting holiday music while we sing them even louder.

A stunning two-mile drive through light park complete with a midway stop - The Holiday Village with carnival rides, amazing bites (corndogs, funnel cakes and more, oh my!) And this year we were surprised with a new light tunnel, reimagined walk-through forest and new displays, great photo opps, gifts, visit with Santa, a lighted strollable forest.  It’s perfectly timed for food, fun and a little time on foot!

PRO TIP: Go early, get tickets in advance and spring for the fast pass on the weekends and prime holiday times. And enjoy it and don’t try to rush it - enjoy it! That includes entry and the experience (so bathroom before you go, but thankfully there’s one at The Holiday Village and you get the corn dog.)

Follow the “red light” to this one-of-a-kind e Follow the “red light” to this one-of-a-kind experience in DFW. 🚨

Named after Bangkok’s legendary road of entertainment of all kinds (Sukhumvit Soi 11), it seems fitting this newly imagined destination would find its home in Arlington’s Entertainment District. Anchoring the NEW @loewsarlington, @soycowboytx (also from @bbbutchers / @berghospitality) recently swung open the curtain this summer with an opening that made heads turn at every corner of this 12,000 sq. ft. of sexy space - with 3 unique bars, patio, viewable kitchen and dining room.

To call it a “Pan Asian restaurant” doesn’t do it justice with its rich menu of fresh sushi, dim sum, caviar, truffle, lobster, waygu (all things you don’t find in the home of the margarita machine and ballpark nachos.) And if you’re looking for entertainment, just take a peek into the expansive kitchen and watch your rolls or omakase be made. The cocktail menu is just as extravagant with everything from mezcal to Japanese whisky, you’re eyes will be just as happy as your lips upon your first sip.

While we experienced live music, fashion show and more as part of the opening, the cool smoke installation and the people-watching is definitely just part of the menu at Soy Cowboy you’ll have to explore.

Food Nerd Note: SoyCowboy is on the upcoming @dfwrestaurantweek menu for just $39, so it’s a steal to take your own trip on a budget. (Make your reservation.)
