New Jenny McCarthy App Teaches Kids How to Behave

I can remember the first time I saw Jenny McCarthy, I thought she was gorgeous, crazy, hilarious and at times a little inappropriate.

Several years later, big and pregnant, I read her “Belly Laughs, The Naked Truth about Pregnancy and Childbirth” and almost wet my pants reading through her pregnancy which helped to make my 38-weeks much easier. What I really loved is that she was REAL.

Oh, how times have changed.

While she is still mother-funny as you can see with new husband Donnie Wahlberg of NKOTB, Donnie Loves Jenny,” what makes her so respectable and relatable is like many parents, she wants the best for her kiddo and will go to the ends of the earth to make it happen. Frustrated by how difficult it was as a parent to find quality educational products which she could use by herself to help her autistic son Evan, she resolved to use her experience and professional connections to produce quality educational products for moms everywhere.

Jenny collaborated with Sarah Clifford Scheflen, M.S., CCC-SLP, a practicing speech-language pathologist who specializes in providing therapies to children with developmental disorders, and together they created education resource company, teach2talk™. Recently the company launched the app, Behaviors with Friends (available on iTunes.)

“Behavior issues are a common complaint from parents,” said founder Sarah Clifford Scheflen. “Behavior with Friends not only teaches children how to behave appropriately, but also provides tips to parents on how to implement their own behavior modifications.”

Behaviors with Friends uses targeted video modeling to help teach your child how to behave appropriately, solve problems, make good decisions, and properly communicate with their friends and other peers in common social scenarios and settings.

Using video modeling, lessons focus on common behavior problems for children, such as:

strategies to resolve conflicts with peers without resorting to tantrums, name-calling or physical violence;
self-management and dealing with anger and frustration in a positive fashion;
sharing and taking turns with friends;
being a good sport;
telling the truth;
bullying;
not interrupting;
being nice to friends and not taunting, and encouraging friends who are less competent instead of teasing; and
appropriate body boundaries.

“All parents want their kids to have friends,” said Jenny. “So we made these videos to help teach children and their parents how to resolve common behavior problems with friends.”

Traveling the World with Trafalgar

I’m a girl that dreams of traveling the world.

With it nearing Valentine’s Day I began reminiscing about my vacation to Italy a few years ago.

Fifteen days traveling through the Italian countryside from Rome, Sorrento, Florence, and Venice, I finally experienced the trip I had only dreamed of and it was everything I had wanted it to be minus cooking my own pasta in my own piazza on the Tuscan hillside or purchasing the Chanel necklace I eyed walking through Florence.

But that journey didn’t come without a huge amount of research and a lot of recommendations from friends of where to go and where not to go. (I’m pretty sure I spent more time on planning that trip than I did planning my wedding…) And while I was sublimely happy most the time, there were many times I was very frustrated learning the train system, reading maps and after a long day, just figuring out what I wanted to eat.

Since then I’ve really yearned to travel to more places to see the world, taste new cuisines and appreciate cultures other than my own. Not living close to any family, I work to keep everyone connected by capturing my kids’ moments – big and small – as a video on my phone.

Game Day: Score Big with Fish Tacos with Mango Salsa

Wanna score big at your Super Bowl Sunday party? Besides having the game on, make sure you have a good menu especially with these Fish Tacos with Mango Salsa!

Even if your favorite team isn’t playing or if guests aren’t really into football, you can still make a touchdown when your spread includes a little fun and a lot of flavor. However, that doesn’t mean you have to spend a lot of time in the kitchen. With just a few ingredients including Del Monte’s new Diced Mangos from Walmart, you will make your party a real fiesta!

Tacos are always a crowd pleaser and when making food for a group of people creating options to customize it make it easier on you in the kitchen and more fun for your guests. This doesn’t mean just putting out tortillas, meat and cheese. You can still show your unique touch by preparing a couple of options with a little flair, like this two-minute mango salsa and an avocado sour cream with fish tacos, that take a normal dish from ordinary to extraordinary.

For our game day fish taco bar, we’ve fried up (or you can bake) a pre-made crusted tilapia, a three ingredient slaw (for extra crunch), our two-minute mango salsa, avocado sour cream, a few cheese options served with corn tortillas (perfect for your gluten free guests, too). The key to a good fish taco is the crunch so using the crusted fish, adding corn off the cob in the mango salsa and the cabbage in the slaw make each bite perfect and will keep your guests coming back for more.

Again, the best part for you? It took less than 30 minutes to create the entire taco bar! And using the left-over mango salsa, serve them with tortilla chips or even better, these tortilla cups for maximum presentation and convenience to keep the game going with no timeouts – for the game or you!

Two-Handed Fish Tacos with Mango Salsa

Description

Make your game-day watching party a real fiesta with this fish taco recipe featuring Del Monte’s Mangos!

Ingredients

Scale

4–6 filets, Treasures from the Sea Encrusted Tilapia, frozen (I used parmesan)
10 corn tortillas, warmed

2-Minute Mango Salsa

1 can Del Monte Mangos, diced and drained
1 package pico de gallo (found at Walmart or you can make yourself)
1 cob of corn off the cob, fresh and uncooked

Avocado Sour Cream/Crema

1 cup sour cream (or plain greek yogurt)
2 avocados, smashed

Citrus Slaw

1 bag shredded cabbage
1 tablespoon fresh lime juice
2 tablespoons cilantro, chopped
1–1.5 cups of feta or cojita cheese

Instructions

Combine all slaw ingredients into a bowl and place in fridge to marinate flavors.
Meanwhile, fry/bake the fish as directed on package. Once completed, slice into strips or bite-sized pieces.
Next, mix mangos, pico and corn into a bowl.
Then, mix mashed avocados and sour cream into a bowl.
For taco bar, place fish, slaw, salsa, cream and cheese into separate bowls for guests to create their perfect taco.
Enjoy!

Share the fiesta fun with the kids while the grownups watch the game with the “Book of Life.” Available January 27 at Walmart, my kids are excited to bring this one home after seeing it in the theatre. Enjoy the Latin-themed legend of Monolo and his “epic quest through magical, mythical and wondrous worlds in order to rescue his one true love and defend his village.” Since my children are enrolled in Spanish immersion schooling, this movie was a great way to fuse the cultural aspect of Latin culture including Dia de los Muertos. However, even without the basic knowledge, you and the kids can still enjoy the story, its humor, and its teachings, as well as the vivid animation.

Balancing it All: Christie Rampone, U.S. Women’s National Soccer Captain

The last few weeks I haven’t exactly been at 100%. With all the Christmas chaos and 2015 coming in with such force, I’m still trying to find the best way to manage the balance of being a mom, a wife, a business owner, a blogger and just being me. So when I had the chance to speak with another mom that I felt really has a lot of pressure trying to do it all as Professional soccer player for the Sky Blue FC and Captain of the U.S. women’s national soccer team, I was all ears!

Just check out what Christie Rampone had to say when I asked her about “doing it all.”

What is balance for you? How do you measure it?

Rampone: Balance is key for me. The importance of doing my job as a soccer player, a mom and a wife is all predicated on doing them all well. If I am unable to fulfill any of three roles, I end up being unsuccessful at all of them. But when I am able to do all three well, everything falls into place. I feel that getting balance is less about putting a measured amount of time into something but more about making the time you put in count. For example, my workouts now are much shorter than when I was young. But I am so much more efficient and productive because of my experience and knowing how to maximize my time.

What are your tips for balance?

Rampone: Concentrate on one thing at a time. Do not take on too much. Be in the present, always. You can only control what you can control. Balance is about perspective. You have to prioritize what’s important and what can wait. Don’t wear yourself thin, you’re only one person. There is a time for your career and there is a time for family. Separate the two and you will find it much more enjoyable.

How has being part of a team helped you with interpersonal/family dynamics?

Rampone: That’s a great question. I guess I would say that a successful family is much like a successful team. People must work together, sacrifice for the benefit of the team and constantly communicate. Our team is much like a family. We may not always all like everything about each other, but we have respect and are willing to do anything to help each other.

What things are important to you as a busy mom?

Rampone: Being a good wife and mother and also being good at my job are the priorities in my life. All three of these roles take a tremendous amount of effort and focus. I work hard to do all three well and I get tremendous satisfaction out of it.

Could you just be a mom? Could you just be an athlete?

Rampone: I was an athlete before I was a mom. And I may soon find out what it is like being only a mom since my career is drawing to a close. But by doing both I believe that I am setting a great example for my daughters, and hopefully other young women, that you can have it all.

At my age and with all that I have on my plate, I need to work harder at staying healthy inside and out. I’ve always taken care to eat healthy and to exercise regularly. I actually LOVE to go grocery shopping…or at least the experience of it. Smelling the bread, touching the vegetables, seeing the new deli items, and of course, catching a sample or two. Ring in the New Year with Prime Rib {Recipe}

There’s nothing like celebrating the holidays with delicious, special occasion meals. One of my family favorites is Prime Rib. Tender beef with a seasoned crust, paired with creamy spicy horseradish dipped into the rich flavor of au jus. Unfortunately, I have always had to rely on some restaurant OR someone else to make it – until now.

With help from my nearby Market Street DFW, I can pick up certified Angus Genuine Texas Beef Prime Rib AND know how to prepare it with cooking tips straight from Chef Chris. The beef from Genuine Texas Beef is made by Texans for only Texans and is available at Market Street.

Using only five ingredients and this video, my family can enjoy a meal I normally I can only get at my favorite four-star restaurant at my own family dinner table.

And a juicy prime rib dinner wouldn’t be complete without a hot bowl of au jus sauce to dip it into. Even easier the Prime Rib, with just a few ingredients and just a little bit of time, you’ll have a Prime Rib that your friends and family will ask you to make again and again.

Easy Prime Rib Au Jus Dipping Sauce

Ingredients

Scale

1/4 cup beef fat drippings from prime rib
1 1/2 tablespoons flour
2 cups beef broth (can use packaged variety)
salt and black pepper

Instructions

Melt fat in a skillet over medium-high heat.
Whisk flour into drippings whisking constantly until the mixture thickens (3 minutes.)
Pour beef broth into mixture.
Increase heat to high and bring mixture to a boil.
Boil mixture until it thickens.
Season with salt and pepper to taste.
Serve.

Go Big this NYE with Big D Baklava {Recipe}

Want to make a big impression on New Year’s Eve? Then make this Big D Baklava – huge on flavor, not on work!

When a group of obsessive-compulsive, Type A mom bloggers get together, we get together to plan for other get-togethers. (Always multitasking we are!)

Recently a group of us met to share recipes and ideas for hosting a New Year’s Party and how to be the hostess with the mostest using Pepperidge Farm Puff Pastry. While I’m already a huge fan of pastry puff wrapped brie (my holiday staple), I learned that I could create an entire party menu with a little creativity and a whole lotta puff pastry!

Of course, as good mothers/party planners should, we had to “test” everything.

And it was good. Oh so good!

Did you know that Pepperidge Farm makes not only puff pastry sheets, but cups too? So you can use them for savory items as well as sweet ones like these creamy mushroom puffs. (They were as good as they sounded, believe me.) The puff pastry is made like pie pastry, but when the 60 flaky layers of dough are baked, it rises eight times higher in size! Now that’s a Puff-Out Party!

One of my favorite holiday recipes I’ve been making for years is baklava. My father even requests it and he is a picky eater for his birthday. However, for the holidays, I wanted to add a little something to it for an even bigger taste. By using Pepperidge Farm Puff Pastry and a little touch of chipotle powder, my baklava went from great to amazing! Even if you don’t like heat, you can’t taste the spice exactly, you get a new layer of flavors that can’t be beat and using the puff pastry, you get Texas-size baklava that will bring ’em coming back for more each time.

Of course, if you want a little more flavor, you can always turn up the heat. Here in Dallas, Texas everything is always a little bit bigger and a whole lot better, so I’m sharing my recipe for Big D Baklava.

Big D Baklava

Ingredients

Scale

1 package (16 oz) Pepperidge Farm Puff Pastry
1 pound of nuts (I use 1/2 walnut + 1/2 pecan)
1/2 cup butter (or 1 stick), room temperature so it can be spread
1 tablespoon cinnamon
1/2 teaspoon chipotle pepper (ground)
1/2 cup water
1/2 cup sugar
1 teaspoon vanilla
1/4 cup honey

Instructions

Preheat oven to 375 degrees F.
Butter the bottoms and sides of a pan with a lip (9×13 works well.)
In a bowl, mix nuts, cinnamon and chipotle together. Set aside.
Unwrap 1 puff pastry sheet, lay on counter or table and coat one side with butter.
Divide sheet into 12 squares.
Sprinkle 1/3 of nut mixture on each square.
Next with 2nd sheet of puff pastry, butter and cut squares into 12.
Sprinkle 1/3 of nut mixture then cover with squares.
Add remaining nuts to top of pastry.
Place squares in oven and cook for 15-20 minutes until brown.
Meanwhile, boil sugar and water until melted. Add vanilla and honey. Simmer for about 20 minutes.
Remove baklava squares from oven and spoon sauce over squares. Allow to cool. If using for gifts place on wax paper so they won’t stick. Leave uncovered or pastry will get soggy.
