Healthy Avocado Cappuccino Truffles

What’s better than truffles? Healthy truffles! With 5 ingredients you can make healthy avocado cappuccino truffles with a secret ingredient – AVOCADOS!

It doesn’t take much for me to stop for coffee…especially ICED COFFEE. However, when you’re trying to lose weight,  you don’t give up those calories easily for coffee. 

But with the new Skinny Cow Iced Coffee, you can have your coffee and eat it, too. However, who wants to eat cake by yourself? So I called some of my best gal pals over to catch up after the holidays for a fun and easy “Coffee Break” party to try the three Skinny Cow Iced Coffee flavors paired with my new recipe for healthy truffles!

While I love hosting a party with a good theme, I didn’t have much time for much creativity although I still wanted the get together to feel special.  Nowadays it’s hard to have a time everyone can pause, even just for an hour, but it actually didn’t take much to create a “cafe-inspired table” with coffee filter flowers, a coffee candle and my healthy, five-ingredient cappuccino truffles.

Using some leftover recycled coffee filters, straws and some ground coffee, I easily made a nice tablescape with “coffee flowers.” I think they turned out adorable and the aroma of coffee each time I walked by was amazing for this coffee lover.

Skinny Cow has long been a favorite in our house for their ice cream sandwiches and other sweet treats, but now at only 120 calories for iced coffee, I don’t have to choose if I treat myself with an iced coffee. I can enjoy three flavors of Skinny Cow Iced Coffees: Creamy Cappuccino, Mocha Latte and Vanilla Latte.

No matter if it’s cold outside or a blazin’ 100 degrees, Skinny Cow Iced Coffee is perfect for a morning or afternoon pick-me-up! Each of the flavors featured the delicious flavor of coffee with a subtle hint of some of my favorite flavors. Since we were having an iced coffee tasting party, we each took turns enjoying each flavor starting with the Vanilla Latte, then Creamy Cappuccino and last the Mocha Latte. And just like my friends; we all liked a different one for different reasons!

While I really could enjoy my Skinny Cow Iced Coffee as a treat in itself, I wanted a little something for the party. But since we all are trying to eat healthier, I wanted to make something that was healthy and paired perfectly with coffee. An idea brewed: Cappuccino Truffles! Using a fun recipe I found online with one REALLY unique ingredient, I was able to make them quickly, easily and really healthy! And based on the reviews from my friends, this recipe is a real keeper! Did I mention it only had five ingredients, too?

Healthy Avocados Truffles

Description

These healthy cappuccino truffles only have five ingredients – including avocado instead of butter or milk!


Ingredients

Scale

6 oz. chocolate (the darker you go the better)

1/3 cup mashed avocado (small avocado)

1/2 teaspoon vanilla extract

pinch of salt

1 tablespoon instant espresso powder

2 tablespoons cocoa powder, for rolling (optional)


Instructions

  1. Combine the chocolate, vanilla and salt over a double boiler, and melt until completely smooth. (This can also be done in the microwave.)
  2. Mash the avocado with a fork until no lumps are visible and then stir it into the melted chocolate mixture until smooth.
  3. Place in the fridge to set for 20 minutes.
  4. Once slightly firm, roll the chocolate into 12 balls and place them on a pan lined with parchment paper. (Don’t roll them in your hands for long or they will begin to melt.)
  5. Place the 2 tablespoons of cocoa powder and instant espresso powder in bowl and roll each truffle into the cocoa to coat.
  6. Serve at room temperature, but need to be refrigerated to be stored.

I’m gonna be honest…Valentine’s Day is not my favorite holiday. I might be married now, but I can count not one, but two different Valentine’s Days I had a breakup. And there were plenty of V-days that there wasn’t anyone around at all including the year I spent Valentine’s Day at the movie theatre watching “Titanic.” 

That was definitely a sinker.

Bagna Cauda (Garlic Dip)

Description

The dip for garlic lovers! Dip your veggies or bread in this and you will be in love (just watch your breath!)


Ingredients

Scale
  • 3/4 cup olive oil
  • 6 tablespoons (3/4 stick) unsalted butter, room temperature
  • 12 anchovy fillets
  • 6 large garlic cloves, chopped
  • Sliced Veggies and bread to serve

Instructions

  1. Blend oil, butter, anchovies and garlic in processor until smooth.
  2. Transfer oil mixture to heavy medium saucepan. Cook over low heat 15 minutes, stirring, occasionally.
  3. Season with salt and pepper.
  4. Pour sauce into fondue pot or other flameproof casserole. Keep while serving with veggies or bread.

Best Galentine’s Day: Spinach Gnocchi Balls

Craving something garlicky and buttery without the carbs? Spinach Gnocchi Balls will leave your breath strong, your teeth dirty, and your stomach happy.

I remember many moons ago when I was a teenager I hosted a girls-only Valentine’s Day Dinner for all my gal pals that didn’t have a Valentine’s Day date. This was well before it was called Galentine’s Day  or before we all had cell phones to take cute photos of our evening to show social media (thank god for that!) But what I do remember was the rule for the meal; everything we had must be full of garlic or something you’d never eat in front of your date.

So I made heart-shaped crescent rolls, creamy chicken alfredo, and these Spinach Gnocchi balls. The recipe is actually one my mom had been making for me for years and was so. freaking. good. Unlike most gnocchi, these don’t have any flour, so it’s not a traditional dumpling. These are full of spinach and uses cheese as a binder. (So if you’re either on a veggie kick or are riding high on the Keto train, these will rock your world.

Description

Ingredients

Scale

1/4 cup finely chopped onion
2 10-ounce package frozen spinach (chopped, thawed, and drained)
1/2 cup ricotta cheese
1/4 teaspoon salt
2 tablespoons butter
1 beaten egg yolk
dash pepper
1 cup grated Parmesan cheese
1/8 teaspoon ground nutmeg


Instructions

Cook onion in 2 tablespoons butter until tender. Add spinach. Cook 5-7 minutes until tender and all liquid is evaporated; stirring frequently. Cool slightly.Then combine egg yolk and remaining ingredients to mixture. 

Grease a round baking pan. Then take 1 tablespoons of mixture into your hands and roll into a ball. Continue with all the mixture. Next drizzle with butter and parmesan cheese. Bake at 425 degrees for 12-15 minutes.

Give your holidays an Italian twist with this Cheesy Pasta Pie that’s a creative family favorite featuring rigatoni, marinara and all the cheese!

If I had to choose only two foods to eat for the rest of my life, the first one would be pasta and the second one would be cheese.

And combine them together…you find perfection.

During the holidays, I can appreciate a turkey or a ham, but honestly, when it comes to a special occasion or a special day like Christmas, my taste buds call for Italian.

Thankfully, Italian food is some of the easiest to make and it can feed a huge family! No one gets upset either when you say we’re serving lasagne. NEVER.

And you can put all the veggies in and no one complains either. BECAUSE CHEESE.

So during the holidays we’ve started to go for a more Italian menu so it keeps us out of the kitchen and doing the stuff that really matters – like visiting with family, friends, and enjoying the time together.

But of course, during the holidays, you don’t just want something you can make and eat every day. You want something that makes an impression. Something that says, “this dish is so good and I am too.”

Cheesy Pasta Pie (6 of 9)

So with the help of a springform pan, you can use Barilla pasta and marinara to make a this very unique presentation on a baked ziti using rigatoni pasta. And like whipped cream on a pie, cover the top with Galbani fresh mozzarella for the ultimate cheesy bite! (This dish can be made vegetarian as well although I opted for a lean ground chicken.)

Description

Ingredients

Scale
  • INGREDIENTS
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 garlic cloves, chopped
  • 1 pound ground chicken, turkey or other protein
  • 1 16 ounce jar Barilla Marinara Sauce
  • 1 pound Barilla Rigatoni Pasta
  • 1 package Galbani Fresh Mozzarella, sliced
  • ½ cup grated parmesan cheese (optional)

Instructions

  1. Preheat oven to 375 degrees F.
  2. In a saute pan, heat olive oil over medium heat. Add onion and garlic until fragrant.
  3. Add ground protein and brown. Add ½ jar of marinara to pan.
  4. While cooking, boil rigatoni until al dente (about 8-10 minutes.)
  5. Drain pasta and add other ½ off of marinara to pasta and toss.
  6. Spray a 9-inch springform pan with cooking spray. Place on a large baking pan with parchment paper.
  7. Arrange pasta vertically in the prepped pan. Pack the rigatoni tightly.
  8. Spread the meat sauce on top of the pasta.
  9. Lay sliced mozzarella across the top of the pie. Sprinkle parmesan cheese (optional.)
  10. Bake the pasta pie in the oven for 375 degrees F for 15-20 (until melted.)
  11. Place on serving plate, then remove springform ring and serve.

Want to know the last time I made dinner for my family from scratch?


Honestly, I can’t remember the last time I spent hours slaving away in the kitchen, but last night I was able to serve a made-from-scratch meal made with real ingredients with no preservatives or artificial ingredients. All with a little help from Michael Angelo’s Signature Line.

With our busy work schedules, kids’ practices, and the other stuff that comes up, it doesn’t matter how planned out I was hoping dinner was going to be, it just doesn’t happen. So I always pick up a Michael Angelo’s meal (find yours here) and have it ready for those days it just “ain’t gonna happen.” And with choices like eggplant parmesan, shrimp scampi, and lasagna, everyone looks forward to mama’s “Italian night” even if the mama they’re really talking to is Michael Angelo’s mama, Sara. All I do is put it in the oven and get ready for everyone to say “smells good, mama,” and viola.

Chocolate Hazelnut Mousse

When I do have a few minutes to spare while the Michael Angelo’s cooks, I go the extra mile and make this creamy hazelnut chocolate mousse. It’s the kids’ favorite, but during the week I never have time to make it. But when all I have to do is wait for the timer to go off, I grab just five ingredients to create this rich, smooth and sinful dolce that no one can resist and pairs perfectly with any of Michael Angelo’s selection including:

  • Michael Angelo’s Eggplant Parmesan with eggplant, tomato sauce and lots of cheese: mozzarella, parmigiano reggiano and recorino romano.
  • Michael Angelo’s Shrimp Scampi with plump, tender shrimp with lemon butter, garlic, tomatoes and parsley.
  • Michael Angelo’s Lasagna layered with beef, robust tomatoes, herbs and cheese – oh glorious cheese

Like the Michael Angelo’s meals, the hazelnut chocolate mousse is super easy and oh so good. Just like Italy, the desserts are actually not complicated, but totally full of flavor. The twist of hazelnut (another Italian staple) tastes just makes you think it took a long time to make and when you really want to seal the deal, you throw in a little whipped cream and shaved chocolate to make the ooohs and ahhhs even longer.

Description

Ingredients

  • 4 large eggs yolks
  • 4 tablespoons sugar
  • 2 cups heavy cream
  • ¼ cup hazelnut spread
  • 2 cups bittersweet chocolate, melted
  • 1 teaspoon vanilla extract

Instructions

  1. In a saucepan, whisk together eggs, ½ the sugar, and ¾ cup heavy cream.
  2. Cook over a medium-low heat, stirring approximately 3-4 minutes, but don’t allow to boil.
  3. Remove from heat, whisk in melted chocolate, hazelnut spread, and vanilla,
  4. Strain into bowl and chill.
  5. With an electric mixer, beat remaining 1 ¼ cups heavy cream and the remaining sugar.
  6. Whip until still peaks form.
  7. Stir in 1/3 of whipped chocolate into cooled custard mixture, then fold in the rest with a rubber spatula.
  8. Spoon into dishes, chill, covered for at least one hour.

Notes

  • Optional: Add whipped cream and shaved chocolate, but it’s totally good just the way it is.

1. Find and frame sheet music of a meaningful song.

2. Give the vinyl version of someone’s favorite singer, bad or album.

For less than $10, you can pick up a record frame that can be turned into keepsake art, worthy of the office or bedroom wall.

3. Find a book of poetry and place a bookmark, ribbon or special note between the pages of a favorite poem.

If poetry isn’t your thing, start with “I Carry Your Heart With Me” by E.E. Cummings. It will make even the coldest hearts melt.

4. Turn a basic novel into a keepsake by adding a special inscription on the inside cover.

For an extra-special gift, find a first edition of a book that’s meaningful to your Valentine.

5. Choose a cookbook and make your Valentine a meal using recipes from the book.

Last weekend I shared a few quick ideas for Valentine’s Day you can do with the Fox Good Day. There were several cute ideas, but the one that stood out and has led to several text messages and Facebook emails is this recipe for Red Velvet Oreo Truffles.

In just three steps, I created these little monsters that I’m sure are the reason I only lost two pounds this week. Nevertheless, they were worth every bite I managed to get into my mouth.  As always I had posted this ridiculously cheap recipe to the blog, but the texts just kept coming.

” Where did you your Oreos?” came in streams for about four days as people were in a mad dash to find these limited edition little red devils.

Market Street! Market Street! Market Street! has had them in store since Feb. 4, but will only have them in for a short amount of time.

With cream cheese and the rich taste of red velvet sandwiched in two chocolate wafers, I knew exactly why people were looking for these like buried treasure. In a way, they kinda are…

While already perfect as an Oreo, once you add cream cheese and cover it in chocolate, it is almost overwhelming. So my suggestion is buy two packages…one to eat while you make the truffles with the other bag. Then eat five truffles, box them up and give them to someone else you never see or talk to. If you don’t heed my advice, you’ll eat them all right then and there. And there’s no need to gain a few pounds in one sitting of Red Velvet Oreos.

This recipe is PERFECT for a last-minute Valentine’s Day gift from the kids or something festive to do on Valentine’s Day. So make sure you snag those Red Velvet Oreos at Market Street and while you’re there, you can also snag what you need for a Heart Day dinner with prime rib, chocolate covered strawberries as well as a bottle wine to enjoy after the kids go to bed!

Description

Adapted from the original Nabisco Oreo Cookie Ball recipe, MamaChallenge makes them even better with the limited-edition Red Vevet cake balls.


Ingredients

Scale
  • 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
  • 40 Red Velvet OREO Cookies, finely crushed, divided
  • 1 pkg. candy melts – Red, White or Chocolate

Instructions

  1. MIX cream cheese and 3 cups cookie crumbs until blended.
  2. SHAPE into 48 (1-inch) balls. Freeze 10 min. Dip balls in melted chocolate; place in single layer in shallow waxed paper-lined pan. Sprinkle with remaining cookie crumbs.
  3. REFRIGERATE 1 hour or until firm.

I may have lost some pounds with Jenny Craig, but these cookies I found at Market Street better find a new home because they aren’t going to last more than a day at the rate they are going right now. With only three ingredients and almost no cooking, your kids will love making these Oreo Cookie Balls with their hands. The most important thing to remember: Buy at least two bags of Red Velvet Oreos – one to make the cake balls and another bag to eat. (Just saying…)

Named after Bangkok’s legendary road of entertainment of all kinds (Sukhumvit Soi 11), it seems fitting this newly imagined destination would find its home in Arlington’s Entertainment District. Anchoring the NEW @loewsarlington, @soycowboytx (also from @bbbutchers / @berghospitality) recently swung open the curtain this summer with an opening that made heads turn at every corner of this 12,000 sq. ft. of sexy space - with 3 unique bars, patio, viewable kitchen and dining room. 

To call it a “Pan Asian restaurant” doesn’t do it justice with its rich menu of fresh sushi, dim sum, caviar, truffle, lobster, waygu (all things you don’t find in the home of the margarita machine and ballpark nachos.) And if you’re looking for entertainment, just take a peek into the expansive kitchen and watch your rolls or omakase be made. The cocktail menu is just as extravagant with everything from mezcal to Japanese whisky, you’re eyes will be just as happy as your lips upon your first sip. 

While we experienced live music, fashion show and more as part of the opening, the cool smoke installation and the people-watching is definitely just part of the menu at Soy Cowboy you’ll have to explore.

The lovely folks at the new morning show Morning on Merit Street @morningonmeritstreet invited DFN for a little “roundtable” discussion about dining trends with our own Food Nerd @autumnreo / @mamachallenge and Bill Trevino of @craftandvinerestaurant CraftandVine along with hosts @dominiquesachse and @fanchonstinger for a little dishin’ on dining!
