In one quick phone call, online click or even their new app, I was able to bring home a hot and delicious meal that we all enjoyed and can look forward to eating again and again. While everything in our Mediterranean Family Meal was fresh and delicious, there were a few standouts that make me want to find another reason to make another order right now:

Braised White Beans
Don’t tell me you don’t like beans because this will be the exception! With an aroma of rosemary, garlic and olive oil, you could devour these beans and their sauce as a mean meal within itself. It’s perfect for those days when you are looking for something to warm you up on a cold day or for me, any day that ends in the letter y.

Orzo Tabouli Salad
Like the White Beans, this Pasta Salad isn’t like anything you’ve ever had, so get the idea of a traditional noodle salad out of your head. Made with orzo pasta (that looks like a fat piece of rice), mint, tomatoes and their zesty dressing, the orzo tabouli salad for a side that can’t be beat. I mean I tried to after I found this orzo tabouli salad recipe from Zoës in a TV segment, but my version didn’t come out quite like Zoë’s . It was an ok second when in a pinch, but it’s just not worth it when you can have the real thing that’s healthy to eat and so easy to get your hands on!

Hummus
If you’re a hummus eater, you know the difference between good hummus and “it gets the job done” hummus. Zoës hummus is full of flavor with only fresh ingredients, including chickpeas, tahini, virgin olive oil, fresh lemon juice and spices – which is why it tastes so good. While nibbling on the sliced cucumbers is a great starter (and magic for getting kids to eat their veggies) when it’s paired with the toasted pita bread, it’s so addictive. Then they went and made it triple amazing with the launch of the Hummus Trio.

Expanding off their traditional recipe, Zoës added a basil pesto hummus and a red pepper version. The Basil Pesto Hummus is infused and topped with a made-from-scratch basil pesto prepared with fresh basil, spinach, chopped garlic and parmesan cheese. The Red Pepper Hummus is a delicious, zesty version of the classic hummus with a variety of additional spices, including paprika, cayenne pepper and crushed red pepper, mixed with roasted red peppers, lemon juice, garlic, salt and pepper.

While it’s obvious I love my Zoës, what did the rest of the family think? The kids loved eating “off a stick” with their hands and we all came back for seconds on the sides. And the leftovers? Mom and dad both took them the next day for lunch at work AND we even had salad left for dinner the next night.

20 Minute One Pot Wonder Meals

I love to cook. I hate dishes.

Like to the deepest parts of my soul hate dishes.

And if I don’t invite you over, it’s not that my house isn’t clean; it’s that I’m so embarrassed how bad I’ve put off my dish duty and don’t want you to see.


So if there’s a way I can make a meal in just one dish and in less than 20 minutes, touchdown! Family dinner, dishes done and I can continue down my other 20 things to do that must be completed before bedtime. Gotta love one pot wonder meals to the rescue!

Last weekend I shared a few quick ideas for Valentine’s Day you can do with the Fox Good Day. There were several cute ideas, but the one that stood out and has led to several text messages and Facebook emails is this recipe for Red Velvet Oreo Truffles.

In just three steps, I created these little monsters that I’m sure are the reason I only lost two pounds this week. Nevertheless, they were worth every bite I managed to get into my mouth.  As always I had posted this ridiculously cheap recipe to the blog, but the texts just kept coming.

” Where did you your Oreos?” came in streams for about four days as people were in a mad dash to find these limited edition little red devils.

Market Street! Market Street! Market Street! has had them in store since Feb. 4, but will only have them in for a short amount of time.

With cream cheese and the rich taste of red velvet sandwiched in two chocolate wafers, I knew exactly why people were looking for these like buried treasure. In a way, they kinda are…

While already perfect as an Oreo, once you add cream cheese and cover it in chocolate, it is almost overwhelming. So my suggestion is buy two packages…one to eat while you make the truffles with the other bag. Then eat five truffles, box them up and give them to someone else you never see or talk to. If you don’t heed my advice, you’ll eat them all right then and there. And there’s no need to gain a few pounds in one sitting of Red Velvet Oreos.

This recipe is PERFECT for a last-minute Valentine’s Day gift from the kids or something festive to do on Valentine’s Day. So make sure you snag those Red Velvet Oreos at Market Street and while you’re there, you can also snag what you need for a Heart Day dinner with prime rib, chocolate covered strawberries as well as a bottle wine to enjoy after the kids go to bed!

Description

Adapted from the original Nabisco Oreo Cookie Ball recipe, MamaChallenge makes them even better with the limited-edition Red Vevet cake balls.


Ingredients

Scale
  • 1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
  • 40 Red Velvet OREO Cookies, finely crushed, divided
  • 1 pkg. candy melts – Red, White or Chocolate

Instructions

  1. MIX cream cheese and 3 cups cookie crumbs until blended.
  2. SHAPE into 48 (1-inch) balls. Freeze 10 min. Dip balls in melted chocolate; place in single layer in shallow waxed paper-lined pan. Sprinkle with remaining cookie crumbs.
  3. REFRIGERATE 1 hour or until firm.

Apple Dijon Vinaigrette {Recipe}

While Hidden Valley Ranch makes a bottle of creamy bliss that gets my kids excited to eat any vegetable, I prefer something a little simplier, healthier, tastier and fresher.

I’ve discovered if you make a delicious dressing for your greens, you actually MIGHT like eating your salad without a hundred other ingredients. And since it doesn’t require much more than about 1 minute and five ingredients in your pantry to create this Apple Dijon Vinaigrette, after one bite you’ll have this on your salad, your roasted veggies and even your grilled chicken. Just don’t let your kids see you swipe their applesauce since that’s the main ingredient!

Ingredients

Scale
  • ¼ cup unsweetened applesauce (1 pouch of squeezable sauce)
  • 2 tablespoons of water
  • 2 tablespoons of extra virgin olive oil
  • 4 teaspoons dijon mustard
  • 1 tablespoon honey (option)
  • ½ teaspoon of salt, or to taste
  • ½ teaspoon ground black pepper, or to taste

Instructions

  1. Mix all the ingredients in a blender, food processor, or emulsifier for 30 seconds – 1 minute or until smooth. Chill for at least 30 minutes. Serve with greens or over roasted vegetables.

Brinner Time? Perfect Pancake Recipes {Giveaway}

When breakfast is your favorite meal of the day, you don’t really need a reason to enjoy it any time of the day. However, pancakes, bacon, and all the really great parts of a big breakfast aren’t always possible on Monday mornings with only 20 minutes to get kids get dressed, fed, teeth brushed and out the door.

But when it’s chilly outside and you just want to bundle up in blanket, breakfast, brinner or whatever you want to call it for breakfast at dinner is ideal – especially when you need to get a meal on the table stat.

Coinciding with “National Hot Breakfast Month” in February, Krusteaz has officially named every Wednesday night in February as #BreakfastNight.Never one to not celebrate a “holiday,” I embraced the concept and put together a quick and fun breakfast that we don’t get to have very often – pancakes.

PERFECT CHOCOLATE CHIP PANCAKES
Using Krusteaz Buttermilk Pancake mix, water and a squirt bottle, I was armed to create perfect pancakes. However, my little short-order cooks (my son and daughter) really wanted chocolate chip pancakes. Rather than to mix in the chips, I waited until the batter had hit the pan and then sprinkled the chips lightly onto the pancakes. This way the chocolate wasn’t too melted, making a chocolaty, gooey mess, but just right that when you bit into them you got a pop of chocolate like a cookie!

BACON MAPLE PANCAKES
The kids may have been happy with chocolate chips, but daddy wanted something less sweet and more savory. You can never go wrong with a little bacon (or a lot) and the flavor of maple – so I combined them all into one pancake package! Following the Krusteauz directions, I added my batter to the pan and quickly added a little swirl (straight from the bottle of maple syrup) and sprinkled a pinch of chopped bacon. Quickly I turned them over to complete cooking. When the cakes were ready, I moved them to a plate, added butter, warm syrup and a little more crumbled bacon. I couldn’t help but immediately take a bite…there was just something amazing about having almost all the best flavors of breakfast in one bite.  (I’m a #1 egg fan, but I couldn’t squeeze in another bite of anything after these perfect pancakes!)

Even if your favorite team isn’t playing or if guests aren’t really into football, you can still make a touchdown when your spread includes a little fun and a lot of flavor. However, that doesn’t mean you have to spend a lot of time in the kitchen. With just a few ingredients including Del Monte’s new Diced Mangos from Walmart, you will make your party a real fiesta!

Tacos are always a crowd pleaser and when making food for a group of people creating options to customize it make it easier on you in the kitchen and more fun for your guests. This doesn’t mean just putting out tortillas, meat and cheese. You can still show your unique touch by preparing a couple of options with a little flair, like this two-minute mango salsa and an avocado sour cream with fish tacos, that take a normal dish from ordinary to extraordinary.

For our game day fish taco bar, we’ve fried up (or you can bake) a pre-made crusted tilapia, a three ingredient slaw (for extra crunch), our  two-minute mango salsa, avocado sour cream, a few cheese options served with corn tortillas (perfect for your gluten free guests, too). The key to a good fish taco is the crunch so using the crusted fish,  adding corn off the cob in the mango salsa and the cabbage in the slaw make each bite perfect and will keep your guests coming back for more.

Again, the best part for you? It took less than 30 minutes to create the entire taco bar! And using the left-over mango salsa, serve them with tortilla chips or even better, these tortilla cups for maximum presentation and convenience to keep the game going with no timeouts – for the game or you!

Two-Handed Fish Tacos with Mango Salsa

Description

Make your game-day watching party a real fiesta with this fish taco recipe featuring Del Monte’s Mangos!


Ingredients

Scale
  • 4–6 filets, Treasures from the Sea Encrusted Tilapia, frozen (I used parmesan)
  • 10 corn tortillas, warmed

2-Minute Mango Salsa

  • 1 can Del Monte Mangos, diced and drained
  • 1 package pico de gallo (found at Walmart or you can make yourself)
  • 1 cob of corn off the cob, fresh and uncooked

Avocado Sour Cream/Crema

  • 1 cup sour cream (or plain greek yogurt)
  • 2 avocados, smashed

Citrus Slaw

  • 1 bag shredded cabbage
  • 1 tablespoon fresh lime juice
  • 2 tablespoons cilantro, chopped
  • 1–1.5 cups of feta or cojita cheese

Instructions

  1. Combine all slaw ingredients into a bowl and place in fridge to marinate flavors.
  2. Meanwhile, fry/bake the fish as directed on package. Once completed, slice into strips or bite-sized pieces.
  3. Next, mix mangos, pico and corn into a bowl.
  4. Then, mix mashed avocados and sour cream into a bowl.
  5. For taco bar, place fish, slaw, salsa, cream and cheese into separate bowls for guests to create their perfect taco.
  6. Enjoy!

Notes

My favorite way to layer the taco is: fish, slaw, salsa, cream and then cheese.

Don’t forget the ninos!

Share the fiesta fun with the kids while the grownups watch the game with the “Book of Life.” Available January 27 at Walmart, my kids are excited to bring this one home after seeing it in the theatre. Enjoy the Latin-themed legend of Monolo and his “epic quest through magical, mythical and wondrous worlds in order to rescue his one true love and defend his village.” Since my children are enrolled in Spanish immersion schooling, this movie was a great way to fuse the cultural aspect of Latin culture including Dia de los Muertos. However, even without the basic knowledge, you and the kids can still enjoy the story, its humor, and its teachings, as well as the vivid animation.

Eggs are SO Good for You

Eggs are among the most nutritious foods on the planet. With Vitamin A, Vitamin B5, B12, B2, Vitamin D, Vitamin E, Vitamin K, Vitamin B6, Calcium, Zinc, Omega 3s and a whole nest of other healthy things your body needs. All from this simple oval that is only around 75 calories and high in protein. Now while eggs have cholesterol, it’s the HDL they raise which is the GOOD cholesterol, which lower the risk of heart disease, stroke and other various issues.

They also are very fulfilling! In one study I read of 30 overweight women, eating eggs instead of bagels for breakfast increased feelings of fullness and made them automatically eat fewer calories for the next 36 hours.

Difference Between Egg Types

One of the biggest questions asked is what is the difference between brown eggs and white eggs. I could give you a really long explanation…but long story short – one is brown, one is white.

However that’s not the only way you can slice and dice your eggs. Nowadays, the store has many options for your egg needs including:

  • Cage Free
  • Organic
  • Vegetarian
  • Free-Range
  • Pasteurized

Ways to Cook Eggs

  1. Hard Boiled: An egg cooked in boiling water with the shell intact. Hard boiled eggs are cooked through until both the whites and yolk have completely set.
  2. Omelet (Omelette):  Eggs that have been beaten and then cooked quickly in a frying pan. Omelets are often folded over a filling of cheese, vegetables, meat, or a combination of items.
  3. Over Easy: A fried egg that is flipped and cooked yolk side down only long enough to create a film over the top of the yolk, leaving the center of the yolk liquid.
  4. Over Hard: A fried egg that is flipped and cooked yolk side down until the yolk has completely cooked through.
  5. Poached: Eggs that have been removed from their shell and then cooked in a hot liquid. The cooking liquid can be water, broth, or any sauce. Poaching in water is often used as a way to cook eggs without having to use extra fat. Poaching in broth or sauce adds flavor to the cooked egg.
  6. Scrambled: Raw egg whites and yolks are beaten together and then cooked in a skillet. The beaten egg mixture is gently agitated as it sets to create a curdled texture.
  7. Shirred: Eggs that have been baked in a ramekin (sometimes with butter, cream or other sauces) until the whites have set but the yolk is still liquid.
  8. Soft Boiled: An egg cooked in boiling water with the shell intact. Soft-boiled eggs are cooked only to the point at which the whites are set but the yolk is still liquid.
  9. Sunny Side Up: A fried egg that is never flipped or cooked yolk side down. The whites cook until completely or partially set while the yolk remains liquid.
  10. Eggs Benedict: An English muffin topped with ham or bacon, a poached egg and hollandaise sauce.

Tips to Make the Perfect Egg Every Time

Now here’s where it gets really good! You’ve probably fried, boiled, or scrambled an egg, but it didn’t work out the way you intended. While an egg seems so easy to cook, it’s all in the details. I mean there’s a reason most people enjoy eggs benedict when they go out to eat and not at home, right? 

1. How to Boil an Egg: Ice water, old eggs and 12 minutes.

2. How to Poach an Egg: Fresh eggs and a mesh strainer not vinegar or salt make these eggs perfect.

3. How to Scramble an Egg: Key here is not to stir them too much.

4. How to Fry an Egg: Medium heat to evenly cook the egg and make sure to not bust the yolk!

5. How to Bake and Egg…in an Avocado!

  • 1 ripe avocados
  • 2 fresh eggs
  • 1/8 teaspoon pepper
  • fresh herbs

Instructions

  1. Preheat the oven to 425 degrees.
  2. Slice the avocados in half, and take out the pit. Scoop out enough from the avocado to fit egg.
  3. Place the avocados in a small baking dish.
  4. Crack an egg into each avocado half.
  5. Place in the oven and bake for 15 to 20 minutes or until the eggs set.
  6. Remove from oven then season.

With all those busy family schedules – work, school, play and all that in between – it keeps us from being what we are supposed to be – a family!


Family-Dinner-Project

The Family Dinner Project seeks to help all of us to get back to the things that matter like food, fun and conversation at mealtime. A program led by Project Zero at Harvard, the FDP is full of recipes, conversation starters and research to back up the basic concept that a family meal is good for the spirit, brain and health of a family. Actually 15 years of research shows families that eat together experience:

  • Better academic performance
  • Higher self-esteem
  • Lower risk of substance abuse
  • Lower risk of teen pregnancy
  • Lower risk of depression
  • Lower likelihood of developing eating disorders
  • Lower rates of obesity

So now that you know that you know that dinner time together is a good thing – give them something they can’t resist at dinner…fried chicken and macaroni and cheese!

But since it is a new year and a new you and you want to help your whole family be healthier, here are a few twists we’ve made to make sure that dinner doesn’t just taste a-mazing, but is also healthy, too!

I’ve taken fried chicken to new heights with this gluten-free oven fried chicken that uses gluten-free cereal for a crispy crust. And don’t worry, I didn’t forget the sauce either! Paired with this copy-cat signature recipe from a certain chicken spot that has an affinity for cows, you will be making this recipe again and again – and finding new reasons to put this sauce on everything. Add a little (or a lot) gluten-free mac n cheese (with a little healthy twist of winter squash), you will love your time together – eating, talking and just being together.

Growing up @cocacola made the holidays magic, so when Coca Cola Classic rolled down the road, we had to go peek! Partnering with @enchantchristmas, the experience is part lights, part photo opps and for my kids mostly FOOD and overall a lot of fun - all washed down with (of course, a Coca Cola!) 

What was also great was a little walk through memory lane with Coke Christmas moments throughout the years - cue the polar bears and 18 wheeler!

And this year we were surprised with a new light tunnel, reimagined walk-through forest and new displays, great photo opps, gifts, visit with Santa, a lighted strollable forest.  It’s perfectly timed for food, fun and a little time on foot! 

PRO TIP: Go early, get tickets in advance and spring for the fast pass on the weekends and prime holiday times. And enjoy it and don’t try to rush it - enjoy it! That includes entry and the experience (so bathroom before you go, but thankfully there’s one at The Holiday Village and you get the corn dog.)

Named after Bangkok’s legendary road of entertainment of all kinds (Sukhumvit Soi 11), it seems fitting this newly imagined destination would find its home in Arlington’s Entertainment District. Anchoring the NEW @loewsarlington, @soycowboytx (also from @bbbutchers / @berghospitality) recently swung open the curtain this summer with an opening that made heads turn at every corner of this 12,000 sq. ft. of sexy space - with 3 unique bars, patio, viewable kitchen and dining room. 

To call it a “Pan Asian restaurant” doesn’t do it justice with its rich menu of fresh sushi, dim sum, caviar, truffle, lobster, waygu (all things you don’t find in the home of the margarita machine and ballpark nachos.) And if you’re looking for entertainment, just take a peek into the expansive kitchen and watch your rolls or omakase be made. The cocktail menu is just as extravagant with everything from mezcal to Japanese whisky, you’re eyes will be just as happy as your lips upon your first sip. 

While we experienced live music, fashion show and more as part of the opening, the cool smoke installation and the people-watching is definitely just part of the menu at Soy Cowboy you’ll have to explore.
