If you’ve never to a Total Wine (aka America’s Wine Superstore), the typical store has 8,000 different wines from every wine-producing region in the world, including more than 2,000 wines not available in any other store and more than 2,000 beers. Plus they do sampling, tastings and classes to educated you and help you to appreciate your wine much more. Tonight’s event included delicious apps, cheese pairings, tastings from favorite makers (Conundrum and Moet!), etchings, games, and lots of laughs. Plus it was another wonderful opportunity to browse the huge selection of wines, whiskeys and other spirits that line the many aisle of Total Wine & More®.

Most the time we are so busy we grab just the names and tastes we know, but this really grabbed my attention for finding a new wine for the summer.

Being a huge fan of rosé, I was drawn to this beautiful pink display. So of course, this Rose from Brin de Rose caught my attention, too with it’s beautiful packaging and the notes of pepper, floral notes, and that price! I walked out with several bottles ready to take on the summer head on!

Headed home in the car, I had remembered chatting with a friend a few weeks ago about planning for the summer to spend more time “taking it all in” slowly and savoring the simpleness of all our experiences. The sound of my daughter giggling when she laughs, the aroma of the earth after it rains, the taste of summer when you sip a rose…these were the things we wanted to make sure we enjoyed. 

Somewhere in the conversation, the idea of a frozen rosé popped into our heads. We thought we were geniuses! We had created the best idea since sliced bread. Until of course, I Googled it and found out that we weren’t so smart since half the world had popped up with the same idea. However, the recipes we found for something so simple seemed to take too long (who wants to wait for frozen wine ice cubes) or seemed a little too boring (rose and ice.) We wanted something bright, fresh and like the taste of summer. 

Challenge accepted. 

Our Frozen Rosée Slushy or the fancy name, Frosé, adds all the best parts of summer with berries and lemons blended with rosé, St-Germaine, honey and ice.  The St-Germain is a French liqueur made with Elderflower which is a flower that tastes like like honey and basically the taste of summer and pairs famously with lemons. I was thinking this combination was the perfect pairing for my summer adult slushy, slushee or whatever you want to call it. 

I love when good ideas come together…and then you put them into the blender.

Description

Savor summer with this summer sipper perfect for staying cool with those hot, sultry days!


Ingredients

Scale
  • 1 bottle of Rosé
  • 1/4 cup St-Germaine (add more if you love Elderflower as much as I do!)
  • 2 cups frozen strawberries (unsweetened)
  • 2–3 tablespoons honey (local honey is always best!)
  • 1–2 cups ice cubes

Instructions

  1. Combine all the ingredients in the blender, adding ice slowly until preferred consistency.

Notes

  • I like a drier Rosé. You can choose a sweeter blend and omit/reduce honey for your taste.)
  • This recipe makes a pitcher at a time. Half this recipe for 2-3 glasses of wine (just right for you and your friend.)

There’s nothing like it. The smell. The taste. The crunch.

When you head to the movies, it’s a must have.

Hosting a movie night at home, it’s a must have.

This universal crowd pleaser has kept The Popcorn Store alive and poppin’ since 1982. That’s right, a whole store dedicated to the art of popcorn. And with more than 40+ flavors, you’d think they had thought they had created them all…

BUT along came Pinterest and Food Network…and now you can find every kind of popcorn imaginable. Savory. Sweet. Whatever. 

Except I didn’t find this one. That’s like a Holy Grail.

The idea came to me as my kiddo asked if he could order a sopapilla or churro during a recent trip to our favorite Tex-Mex stop.

Sopapillas are one of those desserts…just saying the name is almost as fun as eating them. Warm airy pillows of cinnamon sugar, powdered sugar, and cinnamon – all dripping with honey. 

Don’t even get me on honey. Liquid gold. If you can get your hands on local (real local honey) then consider yourself lucky. Everything’s better with good honey.

Such a decadent treat – how could it be bad on popcorn?

Sugar. Honey. Cinnamon. Like a sweet mirepoix.

Add the popcorn and you can almost hear the strumming from the mariachi band begin to play.

And so easy you really don’t need a recipe.

But why not!

HOWEVER, before you throw in that microwave package of popcorn…do tastebuds a favor and go au natural with your kernels.

Use this if you wish, or just throw in a quarter cup of kernels into a glass bowl, place a plate on the top (big enough to cover the rim), and put it in the microwave. Depending on your microwave, cook for 3-4 minutes and aha viola! or in this case, popped corn.

Don’t believe me, try it. Really. It’s that easy. And you’ll never go back. Especially if you find out what’s in that bag of store-bought microwaved popcorn. 

So let’s sopapilla!

Ingredients

Scale
  • 5 cups popcorn, popped
  • 1/4 cup sugar
  • 1/4 cup powdered sugar
  • 2 tablespoons ground cinnamon
  • 3–4 tablespoons honey

Instructions

  1. Fill a bowl with popcorn and set aside.
  2. In a bowl, combine sugars and cinnamon together and blend.
  3. Pour sugar mixture over the popcorn and toss (be careful not to crunch the popcorn.)
  4. Pour honey all over the popcorn, being careful to get it over most the popcorn.
  5. Toss carefully.
  6. Inhale the aroma and enjoy!

Just remember this is best fresh and warm so and with a recipe this easy, why would you make it any other way! To store though, make sure you place in a sealed bag or your sopapilla popcorn may taste like sopapillas five hours later…gross.

Many lists will also reinforce that we’re home to the best place for real, deep south crunchy, perfect fried chicken. 

And the name of that home is Babe’s. That’s right “chicken fried with Texas pride!

While a Babe’s Chicken House can now be found in nine locations around North Texas, the first Babe’s was founded (and still stands) in the Unique Dining Capital of Texas in 1993.

Even typing the words I can begin to aroma of the buttery, crispy fried chicken when you open the door…

Unfortunately, there are only two things that stand between you and the smorgasbord of pickle salad, creamy corn and biscuits make its way to you at the table. 

Your choice of Fried Chicken or Chicken Fried Steak and the WAIT.

That’s right – it can be a long one, especially if you hit up a Babe’s on a weekend.

There are no reservations and there’s no bar to enjoy a few cocktails to make the ticking clock seem less daunting. 

But wait – it’s the wait that almost makes Babe’s a mandatory food experience…as long as you do it the right way. 

How to do Babe’s Chicken the Right Way

First, if you plan to go to Babe’s (and you should), make sure you don’t eat much that day.

You’re going to want every part of your belly to enjoy the family-style experience you’re gonna embark on. Also know that the menu slightly differs at each location. If you hit up the original, they’re still serving just the staples but they’re just that good you don’t need the extras. It’s just what you expect from a homemade dinner of fried goodness served with creamy, buttery mashed potatoes with country gravy, Grandma’s creamed corn that will change your life (it’s got a slighty sweet, buttery and smooth texture) and perfectly made pillows of buttermilk biscuits that you’ll want to eat with butter, then gravy, and honey (or sorghum.)

But if you go to some of the other spots, you might find rotisserie chicken, green beans, and even dessert. So call ahead just in case you’re looking for something good. However, you can’t go wrong at all – unless of you have a gluten allergy. Then you need to make the call:) 

Second, bring friends and family.

Babe’s is more fun the more people you have with you. It’s a great place to catch up, celebrate, have dinner together which is something many of us don’t make time for anymore and should.

Third, don’t forget the chairs.

If you have a truck, you can always sit on the tailgate while you wait or in the many seats you’ll find outside Babe’s. But there’s no guarantee you’re gonna score a few – especially all together. So bring the chairs. Also bring a deck of cards or anything else that’s gonna keep the kids happy while you wait. Waiting is really half the fun here.

Fourth, one special thing about Babe’s is that it’s BYOB.

That’s right, you can (and must) bring your own beverages (alcoholic ones that is.) While some folks bring beer, some bring bubbles (I’ve done that a few times), but those bottles can be a real pain, too. And let’s not even talk about forgetting the corkscrew.) If you want to make it easy on you and still enjoy your Babe’s experience, pack up a little ice chest of these small cans. And the can had nothing to do with the process or changing the taste of the wine.

Fifth, Prepare for a good time!

Dinner Served on the Go: A Day in the Life of a Busy Mom

“What’s for dinner?” You’re bound to say it, think it, and hear it at least once a day. But when you’re a busy parent, it’s one of many things YOU have to solve. Here’s how Autumn of mamachallenge.com and her family work to get dinner on the table with la Madeleine.

There’s really not such thing as a normal day. The more I plan, the more it goes awry. But a mom’s gotta try, right?

Here’s a typical rundown. 

5:15 am // My iPhone softly begins chirping to get me up and go to the gym before the kids wake up. I argue with her, hit the snooze and return to dreaming about vacation, organized closets, and clean dishes (mom stuff.)

6:30 pm // The iPhone’s ring has upgraded to a siren and the hubs and I both wake up like a fire drill. We charge upstairs to wake up the kids, argue about outfits (because we forgot to lay them out the night before), and head to the kitchen for breakfast.

7:00 am // Breakfast for the kids consists of anything from yogurt, waffles, sausage or whatever else we can pull together. They eat while I throw together my daughter’s lunch.

7:05 am // While they eat, I find a few minutes to pop in my K-cup, grab my favorite mug and fill it up with cream. The sound of the Keurig dripping into my coffee is the most beautiful sound in the world, next to my kids saying “I love you.” On some days I’d say the coffee wins. (I’m a big fan of la Madeleine’s French Press to get me moving. Pronto.)

7:20 am //  Hair, teeth, and whatever else is squeezed into our last 10 minutes before we have to jet to school to make the line and the bell.

7:30 am // My kids head to the car with the help of their dad and load up while I slap on my workout wear so I drop them off in something besides my pajamas and to motivate me to head directly to the gym. I run to the car and we jet to school to get into the drop off line.

7:50 am // We made it before the bell rings! I pull over and hit up my phone for my first round of emails to make sure what’s sitting in front of me for the day. A quick look lets me know what needs immediate attention and what can wait until 9 am.

8 am // Let the delayed workout begin. On some days I hit up spin class, others I run the treadmill, or when I’m lucky, I get to work with my trainer to really make me do the stuff that I need to be doing for around an hour or so. This year is about my health so I’ve made this a priority so I can be a good example to my kids. I wobble to my car.

9 am // Ah, breakfast! It’s been a few hours since I woke up so I’m starving. However, the phone is ringing and emails need attention. Another cup of coffee and hopefully something healthy goes in my mouth while I slide into my chair and get to it. While in the kitchen, I look through the freezer for something to pull out for dinner, but get distracted by the phone, the doorbell, and the mounting work.

11:30 am // A conference call, emails and work. I had scheduled out my day differently, but most days there’s at least a few fires to put out and there’s always a deadline to make so I’m already behind. I found a big win with an article on one client – whoo. I see one of my posts on mamachallenge is getting some great traffic – whoo hoo! Facebook is building, Twitter still needs love but Instagram is my favorite so I’m excited to really see a few comments here. However, I’m launching two new other sites (always a project happening) so it’s a little bit of craziness! I love promoting and helping others see their dreams come alive with a new website, social buzz and that big magazine win. I admit it’s nice when it’s mine, too.

It’s the duality that I think that makes me the best at what I do. I realize I’m famished. Some days I plan for meetings, but today there’s no time. Protein shake. Get back to it.

1:45 pm // Found myself on Facebook a little longer than I should. There was a recipe (can I make this for dinner?), then a cute dog, and then a sad friend. Sucked into the void – a break better be soon.

2 pm // After a few more hours of getting out timelines, press releases, posting, I need to put together a mini photo shoot for the dish I’m planning to make for a blog post and TV segment. This is both my fun time and crunch time since the kids will be home soon, so I have just about 2 hours to get it made and photograph. Then clean it all up. I throw carrots and a few pieces of cheese at my face and chug a bottle of water since I was due several ounces before noon and I’m already behind.

4:02 pm // I’m already late. I should have been in the car to pick up the kids from school and then off to their afternoon activities. Run in and get them and then sprint to the car to get to theatre practice for the big one, gymnastics for the little girl.

4:30 pm // While they practice, I head to the closest coffeeshop to get in another hour of work. Wireless connections and coffee rule my world. Husband also calls to tell me he’ll be home a few minutes late.

Days don’t always go as planned, but I always have la Madeleine to make me look good at dinner.”

6 pm // Pick up time! I do the rounds at practice we head home. “Mom, what’s for dinner?” I hear. Oh yes, I forgot! That dinner thing looms again. Something quick, but not a drive through. Plus we have a few allergies so I have to think where can I get something that everyone can eat, that we aren’t tired of eating, isn’t and doesn’t take an hour for us to get. We want to eat at home and get our other stuff done, too.

6:05 pm // La Madeleine has a new app so I open it up, make our options and click. It’s ordered so I head towards the cafe which is also on the way home. Relief.

6:20 pm // I roll into la Madeleine’s La Madeleine has a new appand tell them I’m here for pick up. Everything is already sacked and ready to go, so I’m off!

6:30 pm // We’re home! And in just a few minutes, dinner is served. There isn’t a pretty presentation, but with two hungry kids, there’s no time and it still hot. I just open the tops and let them get after their sandwiches. The big one begged for the sacher torte, so I negotiated with a surprise to satiate his sweet tooth.

 I grab a few bites Caesar salad with balsamic chicken and ask them about their day. Dad comes in and looking for dinner. I picked up a jar of his favorite Tomato Basil soup for him – it’s gluten free and with a few servings in each jar, he can enjoy it for lunch tomorrow at work (and I might sneak a bowl in too.)

7 pm // And now it’s homework time. Folders, letters, math, all that – it’s a two person job to try to get them both done before we start the B routine: baths, brushing teeth, books and bedtime.

8:30 pm // Lights out begins. It’s a process that normally lasts until around 8:45 pm, but since it results normally in hugs, snugs, and kisses, I let it stretch. Besides, it’s my favorite part of the day. However, we both need time to get back to work, check in with each other. Plus that salad and soup still have a few bites left.

9 pm // Computer time for both of us as we sit in bed and catch up on everything we haven’t watched. We work until the other one starts to snore and realized it’s time for bed. Lights are out and get ready to start the next day.

12:15 am // I lie in bed and start thinking about tomorrow. “What’s for dinner?”

One of my favorite drinks of the holiday season, I can’t wait for my first sip of eggnog – and then I’m done. 

When I spot it in the dairy aisle, I get giddy because that means the holidays are officially here. But after the first drink, I don’t know what to do with the rest of it.

This Eggnog French Toast Casserole is the way to put that eggnog to work. And even better – you can use almond milk eggnog if you have any lactose issues and it’s just as good! 

You can decide whether you need to add the bourbon or not. 🙂

Description

Take french toast to the next level this holiday with an easy make-ahead brunch casserole with eggnog!


Ingredients

Scale
  • 1 loaf French bread (13 to 16 ounces)
  • 8 large eggs
  • 2 cups half-and-half
  • 1 cup eggnog
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Glaze

  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla
  • 1/2 tablespoons milk (use eggnog if you like)

Instructions

  1. Slice French bread into 1-inch each cubes. (We actually let the kids tear it up so they can help!)
  2. Arrange slices in a buttered 9 by 13-inch flat baking dish.
  3. In a large bowl, combine the eggs, half-and-half, eggnog, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly.
  4. Pour mixture over the bread, making sure all are covered evenly with the milk-egg mixture.
  5. Cover with foil and refrigerate overnight.
  6. The next day, preheat oven to 350 degrees F and cook until brown and bubbly!

To make glaze

  1. Mix powdered sugar, vanilla and milk, 1 tablespoon at a time, until spreadable (mixture will thicken slightly as it sets).

Best Damn Chicken and Waffles Casserole

Chicken and waffles gets even better when it goes casserole! And with one sweet ingredient, you’ll be saying THIS IS the best damn chicken and waffles casserole. 

I remember the first time I heard about chicken and waffles I was like…what? That doesn’t sounds good? Why is everyone freaking out about chicken and waffles? 

…Then I had it. 

Then I understood.

There’s something about the sweetness, the crunch, and the little bit of spice, sandwiched together into one perfect bite. 

Yep, I like it…

But to time the fresh golden fluffy waffles at the same time as hot fried chicken is a little difficult and way more time consuming than I’m willing to put forward (or at least have time to!) 

So in true #mamachallenge form, it was time to look to the world of semi-homemade and put it all together into one dish for a bigger dish of happiness.

Cooking everything together into Chicken and Waffles Casserole not only makes it easier on making, but also serving! And since you can make this in advance, this casserole is ideal for big breakfast/brunch moment like Christmas or when you really want to make an impression.

However, the impression really gets better when the chicken hits the tastebuds. One of our favorite chicken spots is hands down Chick-Fil-A. If you’ve had it, you know – it’s that good. There’s something about CFA and any drive by the eatery with lines of folks parked double-laned around the joint will verify – their chicken is THAT good. While I don’t know what makes it take like what dreams are made of, inspired by the sweetness of their chicken, we added powdered sugar to our breading, along with a little spice to cinch the deal on this chicken and waffles casserole. 

Oh man, it’s THAT GOOD.

  • Nonstick cooking spray
  • 3 pounds boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon seasoning salt
  • 1/2 teaspoon pepper
  • 9 large eggs
  • 2 3/4 cups panko breadcrumbs
  • 1/4 cup powdered sugar

  • 1 1/4 cups milk
  • Serve with maple syrup

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Line two baking sheets with parchment paper and spray with the cooking spray.
  3. Cut the chicken into 1-inch pieces.
  4. Mix together the flour, powdered sugar, chilli powder, garlic powder, mustard powder, salt and pepper in a shallow bowl.
  5. Beat 3 eggs in a shallow bowl.
  6. Place the panko breadcrumbs into a third shallow bowl.
  7. Toss the chicken in the flour to coat, then dip into the egg, and then place in the panko, turning to coat. Place onto the prepared baking sheets and repeat with the rest of the chicken.
  8. Spray the chicken with the cooking spray then bake, turning the chicken over halfway through, for about 20 minutes or until the chicken is cooked through. Set aside.
  9. Grease an 8×13 inch baking dish.
  10. Add half of the cubed waffles in a single layer.
  11. Top with half of the chicken and 1/2 of the cheese then layer the remaining waffles and chicken and cheese.
  12. Whisk together 6 eggs, milk, salt and pepper in a medium bowl until combined.
  13. Pour the egg mixture evenly over the chicken and waffles.
  14. Bake at 325 degrees F for 45 to 50 minutes or refrigerate overnight and bake the next day.

Notes

  • If you really want crispy chicken quick, you can opt to deep fry the chicken instead of baking!

Eggs Benedict is quintessential brunch food. It’s delicate, it’s heavy, it’s creamy, and it’s oh. so. good. Then make Eggs Benedict Casserole and you’ll never go back. 

This with a glass of bubbles and this girl is oh.so.happy.

I don’t remember the first time I had eggs bennie, but I know I was young. When other kids were ordering pancakes, I’d put up my pinky and order the “eggs benedict, please.”

I thought I was so fancy having the bennies.

However, it does take a little work to make perfectly poached eggs and of course, the hollandaise sauce.

If you need to make it for more than one, it almost takes away all the fun that brunch can bring.

But when you make it in casserole form, you alleviate the work and even better, you can make it an advance.

Thus came the idea for eggs benedict casserole. Like eggs benedicts of today, you can add anything you want to it. Just stick with this basic recipe and modify as you see fit.

Just be careful not to make this and not invite anyone over – otherwise, you’ll eat it all yourself.

Ingredients

  • 6 English muffins
  • 12 ounces Canadian bacon / ham
  • 8 large eggs
  • 2 cups reduced-fat milk (or whole milk)
  • 1 teaspoon onion powder
  • 1 teaspoon nutmeg
  • cooking spray
  • 1⁄2 teaspoon paprika
  • Hollandaise Sauce
  • 4 egg yolks
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 cup unsalted butter, melted (1 stick)
  • cayenne
  • salt

Instructions

  1. ut muffins into 1/2-inch cubes. Set aside. Cut Canadian bacon into 1/2-inch squares. Set aside. Whisk the eggs well in a 2-quart bowl. Whisk in milk and onion powder.
  2. Spray a 9-by-13-inch glass or ceramic baking dish with cooking oil spray. Scatter half the Canadian bacon evenly in bottom of dish. Scatter muffin cubes on top of Canadian bacon. Top with the remaining Canadian bacon, scattering it evenly over the bread. Pour egg mixture over the casserole. Cover the dish with plastic wrap and refrigerate overnight, or at least 8 hours, to let bread absorb egg mixture.
  3. Preheat oven to 375 degrees F. Remove casserole from refrigerator and uncover it. Lightly sprinkle the paprika evenly over the top. Cover the casserole with foil and bake for 40 minutes. Remove dish from the oven, remove foil, return dish to the oven and continue to bake, uncovered, until the eggs are set and the bacon on top begins to crisp, about 20 minutes more. Remove the casserole from oven and let it stand 5 minutes before serving.
  4. While casserole bakes, make a hollandaise sauce.
  5. Whisk the egg yolks and lemon juice together until the mixture is thickened and doubled in volume. Place the bowl over a saucepan with lightly boiling water, the water should not touch the bottom of the bowl.
  6. Continue to whisk rapidly.
  7. Be careful not to let the eggs get too hot or they will scramble.
  8. Slowly drizzle in the melted butter and continue to whisk until the sauce is thickened and doubled in volume.
  9. Remove from heat, whisk in cayenne and salt.

So of course brunch during the holidays is my jam (pun intended.)

I can remember when I was pregnant with my first son, every Saturday I would get up and me and the big belly would waddle into La Madeleine and I would order a creamy florentine quiche (with the best crust), fresh fruit, a glass of milk and sit next to the crackling fireplace so I can just spend a little time with him (and do some baby planning.) 

It’s still one of those traditions with him I’ll cherish always. 

Now, thankfully that I can partake in a true brunch experience, La Madeleine has added several new things just in time for the holidays to make it easier to make those special moments happen – even if you don’t have the time! 

Catered or Take and Bake Country French Brunch

I love to make brunch casseroles but unfortunately, if you didn’t have the time to go to the grocery store, throw one together the night before and let it sit, it ain’t happening. With La Madeleine’s new Egg and Cheese Croissant Bake, you can choose sausage and bacon or spinach and either take it home ready to cook or order online and pick it up hot five hours later. You can also add a cheesy potato gratin casserole, freshly-baked mini croissants – butter, chocolate, almond, chocolate almond and blackberry cream cheese, and even a fresh-cut Fruit Salade if you have a big impression to make.

That includes entry and the experience (so bathroom before you go, but thankfully there’s one at The Holiday Village and you get the corn dog.)

Named after Bangkok’s legendary road of entertainment of all kinds (Sukhumvit Soi 11), it seems fitting this newly imagined destination would find its home in Arlington’s Entertainment District. Anchoring the NEW @loewsarlington, @soycowboytx (also from @bbbutchers / @berghospitality) recently swung open the curtain this summer with an opening that made heads turn at every corner of this 12,000 sq. ft. of sexy space - with 3 unique bars, patio, viewable kitchen and dining room. 

To call it a “Pan Asian restaurant” doesn’t do it justice with its rich menu of fresh sushi, dim sum, caviar, truffle, lobster, waygu (all things you don’t find in the home of the margarita machine and ballpark nachos.) And if you’re looking for entertainment, just take a peek into the expansive kitchen and watch your rolls or omakase be made. The cocktail menu is just as extravagant with everything from mezcal to Japanese whisky, you’re eyes will be just as happy as your lips upon your first sip. 

While we experienced live music, fashion show and more as part of the opening, the cool smoke installation and the people-watching is definitely just part of the menu at Soy Cowboy you’ll have to explore.

The lovely folks at the new morning show Morning on Merit Street @morningonmeritstreet invited DFN for a little “roundtable” discussion about dining trends with our own Food Nerd @autumnreo / @mamachallenge and Bill Trevino of @craftandvinerestaurant CraftandVine along with hosts @dominiquesachse and @fanchonstinger for a little dishin’ on dining!
