One of my first recipes that I cooked that my husband liked when we got married was this Chicken and Rice Casserole. It was super easy and quick – and best of all, it never failed me! 10 Point Labels for Education Chicken & Rice Casserole

Ingredients

Scale
  • 4 Boneless Chicken Breast
  • 1–2 stick of butter
  • 1 can of Campbell’s Cream of Mushroom
  • 1 can of Campbell’s Create of Chicken
  • 1 can of Campbell’s Create of Celery
  • 2 c. instant rice, uncooked (I prefer White Rice, but you can use brown rice)
  • 1 c. Emerald Almonds, crushed
  • salt
  • black pepper
  • white pepper
  • garlic
  • paprika

Instructions

  1. Preheat oven to 350 degrees.
  2. Melt butter with all the soups in a sauce pan until blended.
  3. Meanwhile, pound the chicken until it’s an even width.
  4. Then dredge chicken in almonds until slightly covered.
  5. Add rice to the mixture into 9X13 inch glass pan and then add chicken atop the mixture.
  6. Use a spoon or knife to get mixture on top of chicken as well to make sure it doesn’t dry out during cooking.
  7. Sprinkle paprika across the top.
  8. Then place in an oven and cook at 350 degrees for 45 minutes to an hour.

However, both the famed Munich celebration and Addison Oktoberfest, considered one of the most authentic Oktoberfest celebration in North America, offers a cultural experience for families as well.

Addison Oktoberfest offers some amazing things for families including:

  • Das Kinder Stage – a kids stage featuring German style entertainment all three days of the event
  • Fun folk dancing – Not only can kids enjoy a little Chicken Dance, but groups like Texanischer Shuhplattler Verein and STV Almrausch Dancers teach families to do easy German folk dances. Additionally, youth teams from schools in Plano and Carrollton also perform their award-winning folk dances.
  • Carnival – The fantastic carnival area at Addison Oktoberfest is much like the carnival in Munich. Rides can be purchased individually, or guests can purchase a $25 wristband which offers unlimited rides. There are two ways to get the $25 wrist bands – they can be purchased onsite (only offered onsite on Thursday and Sunday) or they can be used ANY day when done as part of the Oktoberfest Kids Package below.
  • Lebkuchen Decorating Classes – While everyone can come and buy tasty Lebkuchen (gingerbread) and other baked treats from the Kaffee und Kuchen Haus, for only $10 adults and kids can take a hands-on Lebkuchen Decorating Class. Advance registration is recommended, and classes are offered all four days of the event.
  • DAWG (Dallas Area Working Group) Pretzel Run Agility Challenge – family fun as working dogs run a pretzel-shaped agility course – Thursday only
  • Oktoberfest 5K and 1M Family Fun Run – benefiting Wipe Out Kids Cancer, this fun race is a family favorite!
  • Dachshund-Day or Dach-Sunday! – On Sunday, kids of all ages will enjoy the Dachshund Parade in the Schloss Addison Tent and the Dachshund Races at the bowl stage.

Drink Your Way Through Italy, Washington and Texas at Grapefest 2014

If the title alone isn’t enough reason for you to get excited, perhaps you should stop reading now.

With an event called Grapefest in a town called Grapevine, you should get the notion these people are serious about their wine and their fun.

Considered the largest wine festival in the Southwest,  GrapeFest, held along Grapevine’s Historic Main Street, Sept. 11 – 14, is a four-day fest actually for the whole family. This year’s features some of the world’s best wine regions with Washington, Italy and of course, Texas.

Some of the favorite festival events include:

    • The Champagne Terrace (my favorite)
    • People’s Choice Wine Tasting Classic, the largest consumer-judged wine competition in the nation with more than 140 Texas varietals from 44 Texas wineries

Last month I enjoyed grapestomping at Messina Hof (which comes to Grapevine in November) so next week I’ll take my turn at at the GrapeStomp at Grapefest. Teams of two take turns to stomp approximately 18 pounds of grapes for two minutes. If your team stomps the most juice, you just might qualify to stomp some more at the Grand Champion StompOff on Sunday, with the winners being awarded the coveted “Purple Foot” award, a beautiful glass foot from Grapevine’s Vetro Glassblowing Studio. Entry fee is $5 per person. Special GrapeStomp events include the Senior GrapeStomp at 10:30 a.m. on Friday, September 12 and the Mayoral GrapeStomp on Saturday, September 13 at 11 a.m. A free special stomping area is also available for kids 13 and under.

Ideas You Can Do for Grandparents Day in September

With less than 100 days until Christmas, 60 days until Halloween, I thought I’d add one more to the pile you think you’re already too late for –Grandparents Day..

9 Fit & Fantastic Foods You Need for Fiber

Over the last 30 days, I’ve gotten a huge crash course in fiber.

Go Under the Sea with The Little Mermaid Birthday Party Ideas

So when my little princess announced several weeks in advance she wanted to “Go Under the Sea” with a Little Mermaid themed birthday party, I knew we couldn’t disappoint – even if it was August.

While I normally love putting our parties together, with everything else happening, we had to whip something together quickly!

She seemed quite happy with her party when she saw it, so I thought we’d share how we put this party together with just a little bit of planning.

INVITE: 

While there are plenty of adorable customizable invites for The Little Mermaid available, there’s something to be said for a FREE emailed invite that also keeps up with RSVPs and will remind your guests when you forget that the party is happening a few days! Heck, you can even thank them with a few clicks, so that’s why I am a huge fan of Punchbowl for their designs. I started using them for our son’s Frozen inspired birthday and fell in instant love. Did I mention these are free? No brainer!

DRESS:

A little princess has to have the right outfit for her party, so this Ariel swim suit was perfect…and so were the accessories including her crown and sunglasses.

DECOR:

What makes an outdoor party in the middle of the summer look like we’re under the sea? It’s all about the decor! From Little Mermaid Table Decorating Kit to Ariel party plates, a little blue and shells made everything feel like we were hanging with Scuttle and Sebastian.  We also used crepe paper on the fence to look like algae.

FOOD:

The food is always my favorite part of a party! However, we didn’t go too crazy to complete the theme; we just added a few fun touches to step it up from a normal backyard party. The only item I didn’t get to make was lobster rolls (AKA Sebastian Sandwiches!)

ENTERTAINMENT:

The rest of the yard was completely full of every water feature I could find – from the a Slip n Slide, Sprayer and a little wade pool. And by playing The Little Mermaid Soundtrack was an important part of creating the experience for the kids.

After hours of water fun and food, I wanted the kids to calm down from all the fun as the sun went down. However, I didn’t want all those wet bodies in my house, especially for the other 25 people at the party. I needed a movie OUTDOORS! A little Google time later, I found Starlight Productions, a turnkey outdoor movie company that does everything for you to make movie magic happen outside. They arrived with a truck, completed set up while the kids played around them and even played some fun music for the kids to keep the party going!

Then once the sun went down, the kids took to their quilts, we passed out the popcorn and glowsticks while “The Little Mermaid” began! The kids were totally taken and the parents were able to watch a movie without worrying if their kiddo was too loud or needed to go the bathroom! Everyone was happy as they went “under the sea” with Ariel, Eric and “the mean witch” Ursula. Everything was so perfect and I didn’t have to do anything! I’ll totally be using Starlight Productions for another party this fall like maybe a Halloween horror movie marathon for my birthday!

Uncle Julio’s Sizzles with 7 New Fajita Entrees + Perfect Peach Margarita

I received a complimentary dining experience at Uncle Julio’s for purposes of this review, however, the comments here are all my own.

When you live in Texas, your opportunity to eat Mexican food – or better yet, Tex-Mex are almost on every corner. However, to find GOOD Mexican and Tex-Mex the whole family can enjoy that not’s not just another version of meat, cheese and tortilla, but something delicious and unique is few and very far between. I’ve have a short list of the places we frequent as a family and the probable entrees we will order. Fajitas for my hubs, tacos for the kids and I’m normally the wild card, but I lean towards seafood almost always.  However, for tonight’s dinner plan, we wanted to mix it up, but know we would have a good dinner – which means we all ate our food, no one cried and we would want to come back the next time.

Always known for good food, good service and a good atmosphere, we were excited to try out Uncle Julio’s and their new menu featuring fajitas with several seafood options! Since the idea hit all the buzz words to make mom AND dad happy, we sat to peruse the menu to make some choices. Considering it was July, a cold margarita was definitely at the top of the list, but not just your normal lime, agave & tequila type. Our server made a recommendation that since this Uncle Julio’s Grapevine location was the site for trying out new items, we would really enjoy a fresh peach margarita. Quickly two were put in front of us as we took to our first sip and learned exactly what summer would taste like if it had a flavor. Just as quickly, we ordered another round, however, it wasn’t just because the cool refreshment was just what the doctor ordered, but because my mouth was flaming hot from the Three-Pepper Guacamole.

As the kids continued to play with their tortilla dough (a great way for kids to pass the time – just ask your waiter), mom and dad caught up on their day as we narrowed down our options.

I’m not good with choices, so it was hard to pick just one from these:

  • Shrimp al Pastor, seared shrimp with pineapple and a mango habanero sauce;
  • Grilled Red Snapper with chipotle crema and sweet sautéed peppers; and
  • Spicy Seared Rare Ahi Tuna, which is pan-seared and served with soy ginger sauce.

All seafood fajitas are served on a bed of julienned zucchini and yellow squash with mango-jicama slaw and a choice of homemade flour tortillas, crisp Bibb lettuce wraps or corn tortillas.

For my hubs, he had a lot more to consider:

  • Three new fajita combinations — one even includes grilled King Crab! — give you a variety of options on one plate.
  • The Plato Vallarta features grilled King Crab legs, served alongside Uncle Julio’s signature chicken and beef fajitas.
  • The Coronado combines two Mexican food loves: crispy beef tacos with Uncle Julio’s chicken and beef fajitas.
  • The Laredo takes a Mexican food favorite and turns it on its side, with two stacked beef enchiladas, presented in mouth-watering layers of high-quality tortillas, beef and cheese, served with fresh chicken and beef fajitas.

All combination fajitas come complemented by fresh guacamole, sour cream, cheese, pico de gallo, Mexican rice, frijoles a la charra, sautéed peppers and onions, and fresh-from-the-oven homemade tortillas.

And then there was the Filet Mignon Fajitas. Served with homemade creamy sunrise sauce along with handpicked peppers, and onions chopped by hand and sautéed to bring out their delicious flavor, these fajitas are served with guacamole prepared to order with fresh, hand-picked Haas avocados, sour cream, cheese, pico de gallo, Mexican rice, frijoles a la charra and homemade flour tortillas.

While both dishes had lots of food; there wasn’t so much that we didn’t both enjoy most of our dishes – thankfully without buttoning our pants. And with the best server, we were so happy with everything. I was still sipping my margarita and nibbling on the peach bits in the bottom of  the glass. We were both just blissfully happy (which doesn’t happen normally when you have two little people at the table, too!)

And while we could have gotten up from the table and been completely happy with the fajitas, the margaritas and the guacamole, the server’s recommendation for sopapillas seemed like the icing on the cake – especially when they were perfectly bite sized for the kids. Warm, cinnamon, sugar and honey was too hard to resist and mom and dad dove in as soon as the plate hit the table.

Since are experience at Uncle Julio’s in Grapevine, I’m almost positive we’ve told everyone around us about how good our dinner was and that we were planning to go back very soon. With so many other fajita options to try as well as the other dishes we couldn’t help to ogle like Bacon Guacamole and a weekend brunch, we plan to be back very soon. And as for our Mexican food shortlist, you’ll find Uncle Julio’s at the top of ours.

While many of the animals sleep, DinoLumia and DinoVision: a Jurassic adventure comes out to play, along with tons of holiday light photo opps and winter fun experiences. Enjoy catching up through self-guided, self-paced walk-through and spend time together while taking photos, which is ideal if you don’t like the holiday overload! And don’t sleep on Santa here, as he has a certain twinkle in his eye the kids always seem to like to catch up with (mom was even able to get a shot.)

Growing up @cocacola made the holidays magic, so when Coca Cola Classic rolled down the road, we had to go peek! Partnering with @enchantchristmas, the experience is part lights, part photo opps and for my kids mostly FOOD and overall a lot of fun - all washed down with (of course, a Coca Cola!) 

What was also great was a little walk through memory lane with Coke Christmas moments throughout the years - cue the polar bears and 18 wheeler!

A stunning two-mile drive through light park complete with a midway stop - The Holiday Village with carnival rides, amazing bites (corndogs, funnel cakes and more, oh my!) And this year we were surprised with a new light tunnel, reimagined walk-through forest and new displays, great photo opps, gifts, visit with Santa, a lighted strollable forest.  It’s perfectly timed for food, fun and a little time on foot! 

PRO TIP: Go early, get tickets in advance and spring for the fast pass on the weekends and prime holiday times. And enjoy it and don’t try to rush it - enjoy it! That includes entry and the experience (so bathroom before you go, but thankfully there’s one at The Holiday Village and you get the corn dog.)

Named after Bangkok’s legendary road of entertainment of all kinds (Sukhumvit Soi 11), it seems fitting this newly imagined destination would find its home in Arlington’s Entertainment District. Anchoring the NEW @loewsarlington, @soycowboytx (also from @bbbutchers / @berghospitality) recently swung open the curtain this summer with an opening that made heads turn at every corner of this 12,000 sq. ft. of sexy space - with 3 unique bars, patio, viewable kitchen and dining room. 

To call it a “Pan Asian restaurant” doesn’t do it justice with its rich menu of fresh sushi, dim sum, caviar, truffle, lobster, waygu (all things you don’t find in the home of the margarita machine and ballpark nachos.) And if you’re looking for entertainment, just take a peek into the expansive kitchen and watch your rolls or omakase be made. The cocktail menu is just as extravagant with everything from mezcal to Japanese whisky, you’re eyes will be just as happy as your lips upon your first sip. 

While we experienced live music, fashion show and more as part of the opening, the cool smoke installation and the people-watching is definitely just part of the menu at Soy Cowboy you’ll have to explore.

The lovely folks at the new morning show Morning on Merit Street @morningonmeritstreet invited DFN for a little “roundtable” discussion about dining trends with our own Food Nerd @autumnreo / @mamachallenge and Bill Trevino of @craftandvinerestaurant CraftandVine along with hosts @dominiquesachse and @fanchonstinger for a little dishin’ on dining!
