Celebrate Halloween & Dia de los Muertos with NEW SPOOKtacular Gluten-Free Halloween Desserts Cookbook {Recipe}

I love Halloween. 

However, with two little ones in a bilingual school, the shift of candy, horror films and slimy gore has turned into understanding the culture and history of Dia de los Muertos or “Day of the Dead.” 
In Latin America, on Dia de los Muertos, Nov. 1, the lives of the deceased are celebrated with food, drink, parties, and activities the dead enjoyed in life.  The most familiar symbol of Dia de los Muertos are the calacas and calaveras (skeletons and skulls), that are often seen symbolizing the holiday. 

Not always able to find ways to help my kids learn about Dia de los Muertos, I was excited to find this recipe in a new organic cookbook SPOOKtacular Gluten-Free Halloween Desserts.  A marriage made in heaven, this cookbook by Kanta and Vitura Barrios, also celebrates both Halloween and Dia de los Muertos through food with an added healthy bonus of gluten-free and dairy-free cooking. 


So I’m sharing the recipe the Barrios family has given my permission to share in hopes you too will appreciate and enjoy just one part of a beautiful, cultural event, Dia de los Muertos. 

MEXICAN CATRINAS & CALAVERAS (PECAN COOKIES)
(4 or 5 Catrinas and 6 Calaveras) 
INGREDIENTS

1/2 cup raw coconut oil or butter, softened
3/4 cup raw sugar (coconut or demerara sugar), pulverized
1 large egg
1 tablespoon pure vanilla extract
2 ½ cups quinoa flour (plus extra flour for rolling the dough)
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1 tablespoon cinnamon powder
3/4 cup finely ground pecans (pecan meal)
Skull Template and Catrina Template and a gingerbread lady cookie cutter of a similar size
(for decorating)
2 batches Royal Icing (see page 6)
Food coloring in white, red, orange
Green, yellow, and black edible ink pen
Icing piping bags with #2 and #3 tips, 1 for white and another for the other colors
Edible orange sugar sparkles (plus any other color you like) a steady hand
ROYAL ICING (covers 6 – 8 cookies)
1 large egg white (could be pasteurized)
1½ cups powdered sugar, sifted
1 teaspoon fresh lemon juice
  • Using an electric mixer, beat the egg white for a few seconds before adding the sugar and half of the lemon juice.
  • The icing’s consistency should be smooth and heavy cream-like.
  • Add the remaining lemon juice (and more if you feel it’s needed) one drop at a time. You may also add more sugar to suit your liking.
  • Just a few drops of liquid, more or less, will alter the icing’s consistency. 
  • We recommend a thicker icing for outlining the cookie, and thinner icing for filling out the inside.
  • Line a baking tray with parchment paper.
  • In a mixing bowl, beat the oil, sugar, egg, and vanilla until the mixture is a creamy consistency.
  • In a separate bowl, mix together the flour, baking soda, cinnamon, salt, and ground pecans.
  • Add the dry mixture to the oil mixture and beat well.
  • Transfer the mixture to a board, and knead it just enough to make it a dough. 
  • Sprinkle some flour on the counter, and roll the dough to ¼-inch thickness. If you are making skulls, cut out the shape using the template provided.
  • For the Catrinas, follow the template provided or find a gingerbread lady cookie cutter of a similar size.
  • Place the cookies on the lined baking tray and bake for 10 to 15 minutes. 
  • Let the cookies cool completely before icing and decorating.


To Decorate

For the Catrinas, divide 1 batch of Royal Icing, and color it white, red, green, yellow, and black. 
You decide how much of each color you want to have. You have a couple of options for decorating this cookie. The first involves using the Catrina stencil and the writing pen. In the final Catrina, the background behind the skeleton will be the cookie itself. 

  • Start by drawing the outline of the Catrina with her skirt, hat, bones, and head straight onto the cookie.
  • Pick a color for the Royal Icing (red, green, or yellow) and use that color icing in a piping bag with a #3 tip to outline the skirt and hat. Once the icing sets, fill in the skirt and hat with the same color. Let the icing set. 
  • Using white icing in the piping bag with a #3 tip, outline the skull, vertebrae, ribs, bone arms, and fingers.
  • Fill the eyes, nose, and mouth with the black icing, using a #2 tip.
  • Finish with design details on the skirt, hat, and earrings using another color or colors and the #2 tip.

Combine Halloween + Harvest For Hauntingly Easy Holiday Decor

What’s the best part of Halloween? The photos!
Here’s one of my kiddos – SpiderMan and our Little Witchy Poo! (so funny I couldn’t get them together).


Also, wanted to share this costume…personally one of my favorites – Cinderella. One of my friend’s daughters wore this dress and she really felt like a princess, especially when the sun went down and her dress lit up. Best of all, since the dress had motion-detectors, when she did a “princess spin” the dress lit up with her! It was magical – and even though she didn’t feel up to par for a long night of trick-or-treating, she definitely enjoyed her time in the “dresslight!” And for mom, the lights made it so easy to keep an eye on your child wherever she walked down the street! Perfect for your “princess” all year long. (I’d snatch this one up if you can find it like at Target or Amazon.com.)

Oh the decorations! We went minimal this year on our decorations since I just didn’t have the time to get them all up and then as soon as I did, I’d have to take them down! So we did a fall harvest theme that could extend into Thanksgiving time so mama’s work wasn’t put to waste. Thankfully, with an online trip to Kmart, I was able to get a few fun fall things to make me look like the next queen of decorating (and all for $100!)

4 Ways Mom Can Make Halloween Simple (and Fun) for Her

I LOVE HALLOWEEN. The decor, the food, the costumes and all the kids ringing my door bell with “Trick or Treat!” It’s just such a sweet, fun and great little holiday!

But with a one-year old and a four-year old, juggling taking my babes trick-or-treating and then running home to meet those kids trick-or-treating SOLO is not an easy task. Not only does it take some careful preparation, but it’s all about timing and for me – simplicity. With such a long day getting things ready and then to continue well after my kids go to bed (when your youngest goes to bed at 7:30 p.m.), the door bell is ringing until at least 9 p.m.


So this year I’m working hard to slimline things without feeling like I’m cutting myself short on something I normally enjoy with a few tips to ensure Halloween is fun for me (as well as the kids!)

1) Order dinner – in advance
I know there are a thousand pins you have collected over the last couple of weeks to create the perfect Halloween-themed dinner, but let’s face it – you can’t do it all. Really. So I just make it a fun night and order a few cheap pizzas, pick them up AHEAD of trick-or-treating and then we’re done. You can eat a slice before you go out and then a few pieces after you get home without any issue. It’s cheap, easy, and fun! Just make sure to put your order in early since Halloween is a big night for delivery, so just avoid the wait (and more traffic on the road) and pick it up yourself. Between the ready-made pizza places like *Cici’s, Little Caesars or Pizza Patron at around $6, you can’t go wrong.

2) Wear Comfortable Shoes
I’ve professed multiple times that I don’t like shoes. We’ll I do, but…they are a necessary for walking the neighborhood as we travel from house to house for trick-or-treating. I could probably just put on my houseslippers/flip-flops and walk out the door. However, since the probability of me bumping into neighbors I haven’t seen in months. For this reason, I want to sport that mom’s-still-got-it look rather than mom-lost-it that sometimes can be seen if you bump into me at the grocery store.

Thankfully, I just found a pair of shoes I’m currently in love with. No, they’re not my normal Crocs, but a pair of Dr. Scholls. Now before you start to think I’ve borrowed a pair of my grandma’s house shoes, you’ve got to take a look at these babies.

Aren’t they cute? I thought so as well and this oxford-style shoe is totally on trend for 2012 (an added bonus for me!) This classic loafer called the Florenza is my go-to shoe for mom style, color and of course, my favorite – COMFORT! 3) Simplify the Bag Load
While I’m not a shoe diva, I am about my bags. I love big bags and can fill them at capacity if you let me (isn’t that what moms are known for.) But on Halloween, with two trick-or-treat bags and all the other necessities – phone and keys, are about all I can handle and I still need both of my hands to lead the kids along the way. That’s why we I found this scarf/clutch combo, I was ELATED.

4) Give Out What You Want 
Another issue over the last few years that has really kept me worried is what food to give out. When I was growing up, if you scored a full-size candy bar from the guy up the street, you were set. But now, what you give out is less a reflection of what kids would enjoy as it is “Is this mom mindful of safety, health and fun?” And of course, costs for a bag of candy soaring more than $10 for a bag of 50 snack-size treats, trying to participate in Halloween has really turned into a chore.

This year I said no more and bought what I wanted my kids to eat and what I would be happy to serve from the House of Reo. For a reasonable cost of $6 a box with 35 bags of Utz Mickey Mouse Cheese Balls, Halloween Rice Crispy Treats and a small selection of chocolate. I stocked up on what I thought we would need for 2 hours and then if any was left over, I could use the pretzels for snacks and lunchboxes while mom and dad wouldn’t have to sneak food out of the kids bags! Plus, Mickey Mouse still makes me cool AND they are gluten-free…SCORE!

Halloween is one of my favorite holidays. I’m not quite Roseanne Connor level, but I do enjoy the costumes, décor and of course, the treats!

Now with kids of my own, it’s not just about my costume, but finding the coolest and cutest ones out there. Growing up @cocacola made the holidays magic, so when Coca Cola Classic rolled down the road, we had to go peek! Partnering with @enchantchristmas, the experience is part lights, part photo opps and for my kids mostly FOOD and overall a lot of fun - all washed down with (of course, a Coca Cola!) 

What was also great was a little walk through memory lane with Coke Christmas moments throughout the years - cue the polar bears and 18 wheeler!

Christmas wouldn’t be Christmas without @prairielights- with a packed car with blankets, Santa hats, hot cocoa and coffee, and blasting holiday music while we sing them even louder.  

A stunning two-mile drive through light park complete with a midway stop - The Holiday Village with carnival rides, amazing bites (corndogs, funnel cakes and more, oh my!) And this year we were surprised with a new light tunnel, reimagined walk-through forest and new displays, great photo opps, gifts, visit with Santa, a lighted strollable forest.  It’s perfectly timed for food, fun and a little time on foot! 

PRO TIP: Go early, get tickets in advance and spring for the fast pass on the weekends and prime holiday times. And enjoy it and don’t try to rush it - enjoy it! That includes entry and the experience (so bathroom before you go, but thankfully there’s one at The Holiday Village and you get the corn dog.)

Named after Bangkok’s legendary road of entertainment of all kinds (Sukhumvit Soi 11), it seems fitting this newly imagined destination would find its home in Arlington’s Entertainment District. Anchoring the NEW @loewsarlington, @soycowboytx (also from @bbbutchers / @berghospitality) recently swung open the curtain this summer with an opening that made heads turn at every corner of this 12,000 sq. ft. of sexy space - with 3 unique bars, patio, viewable kitchen and dining room. 

To call it a “Pan Asian restaurant” doesn’t do it justice with its rich menu of fresh sushi, dim sum, caviar, truffle, lobster, waygu (all things you don’t find in the home of the margarita machine and ballpark nachos.) And if you’re looking for entertainment, just take a peek into the expansive kitchen and watch your rolls or omakase be made. The cocktail menu is just as extravagant with everything from mezcal to Japanese whisky, you’re eyes will be just as happy as your lips upon your first sip. 

While we experienced live music, fashion show and more as part of the opening, the cool smoke installation and the people-watching is definitely just part of the menu at Soy Cowboy you’ll have to explore.

The lovely folks at the new morning show Morning on Merit Street @morningonmeritstreet invited DFN for a little “roundtable” discussion about dining trends with our own Food Nerd @autumnreo / @mamachallenge and Bill Trevino of @craftandvinerestaurant CraftandVine along with hosts @dominiquesachse and @fanchonstinger for a little dishin’ on dining!
